This recipe for Bacon Hasselback Chicken is another delicious version of Hasselback chicken that we make. This is Ken's favorite version. I know it is because he loves bacon. He truly believes that bacon always makes everything taste better. Our other version is Cordon Bleu Hasselback Chicken. Just as delicious, the only problem is that it doesn't include bacon!!
I have never met anyone who doesn't love this Bacon Hasselback Chicken, after all, a little chicken, bacon, onion and cheese in every bite! What is not to like?
This chicken dish is easier to make than you would think! I have to strongly suggest you try this recipe with garlic butter and onions as well, at least once! What a subtle difference it makes and definitely well worth it!
Ingredients in Easy Bacon Hasselback Chicken
- chicken breasts
- shredded cheese
- bacon
- butter or garlic butter
- onion
- salt
- pepper
- paprika
How to make Easy Bacon Hasselback Chicken
Preheat oven to 400 degrees. Prepare a rimmed baking sheet with tinfoil and a rack lightly coated with cooking spray. Set aside.
Par cook the bacon slices or cook them halfway. Place on paper towel. Once cool enough to handle cut each slice into four pieces. Set aside.
Cut slits into the chicken breasts, about ½ inch apart and ¾ of the way through the chicken. As deep as you can cut without cutting all the way through. The depth of the cuts don't have to be exactly the same, just as close as possible. Place on your prepared baking sheet.
Sprinkle chicken with salt, ground black pepper and paprika. Place two or three of the half cooked bacon pieces inside each slit or cut with a pinch of diced onion (if using) and a cube of butter (if using). Bake for 30 minutes or until chicken is cooked through.
Remove from oven and add shredded cheese to the top of each chicken breast. Turn oven up to broil. Return chicken to oven until cheese is melted and nicely browned. Enjoy!

Easy Bacon Hasselback Chicken

- 2 cups cheese, shredded, any variety, more or less to taste
- ½ cup butter or garlic butter, cubed or 1 stick (optional)
- 1 cup red or yellow onion, small, diced or ¼ cup for each chicken breast (optional)
- salt - to taste

- ½ teaspoon paprika (approximately)

I put racks in my pan so the bacon isn’t sitting in the grease. I don’t like flub very bacon, so I cook mine until it is crisp. You can also cook sausage links in the same manner. Great recipe. Thank you!
