We loved the idea of Hasselback Chicken so much we ended up creating a half a dozen varieties that we make regularly. All of them delicious. This Cordon Blue Hasselback Chicken version contains ham, cheese and some seasoning! An easy and delicious dinner idea for any day of the week!
Ingredients in Cordon Bleu Hasselback Chicken
- chicken breasts
- ham slices
- parmesan cheese
- shredded cheese
- crumbs
- paprika
- pepper
- salt
- garlic powder
- onion powder
- Italian seasoning
- oil or mayo
How to make Cordon Bleu Hasselback Chicken
Preheat oven to 400 degrees.
Prepare a rimmed baking sheet with tinfoil lightly coated with cooking spray.
Using a sharp knife cut slits into the chicken breasts, about ½-1 inch apart and ¾ of the way through the chicken. The depth of the cuts don't have to be exact, just do not cut all the way through the chicken. You will have between 5 and 8 cuts per chicken breast.
Whisk together the onion powder, garlic powder, salt, pepper, and mayonnaise or olive oil.
Brush the bottoms of the chicken breasts with half of the mayonnaise or olive oil mixture.
Turn them over and place on the baking sheet.
Brush the tops of the chicken with the remaining mayonnaise or olive oil mixture.
Shove the shaved or sliced ham into each slit and add the cheese on top of the ham.
Sprinkle parmesan cheese, and a light dusting of paprika.
Bake uncovered in the preheated oven for 30 minutes, or until the chicken is cooked through.

- 4 chicken breast, boneless, skinless
- 12 - 15 slices ham, sliced or shaved
- ¼-1/2 cup Parmesan cheese, grated,
- cheese, shredded or sliced, your favorite variety
- paprika - enough to sprinkle on top of chicken
- 1 teaspoon pepper
- ½ teaspoon salt

I want to try this recipe tonight, but don't see where the panko comes into play as well.

I can't thank you enough for catching this omission. We never noticed! Anyways. We have corrected the recipe. We use the panko mixed with the Parmesan and then sprinkled on top of the chicken breast for a little crunch! Depending on your personal taste use between 1/4 and 1/2 cup of Parmesan cheese mixed with the panko. Sprinkle as much or as little as you want on top. Enjoy! We love this recipe around here!
