    Grandma's Souper Meaty Surprise

    Grandma's Souper Meaty Surprise is our favorite way to use up vegetables that need to be used! Just like my husband 's grandma used to make!  This wonderful weekday meal is fast, easy, delicious and different every time!

    Serve over rice or mashed potatoes this easy dinner will be a hit, with both children and adults alike!

    My husband's grandparents lived on a farm and grew or raised everything they ate.  The good old days!

    Ken never remembers his Grandma's Souper Meaty Surprise never being exactly the same, ever.  His grandmother used to use whichever vegetables were in season or that she wanted or needed to use up. 

    No matter which combination of vegetables she chose he always loved it.  Now we still have this recipe in our regular rotation!

    Not only do you have endless options with the vegetables you can use but you also can use any ground meat.  Sometimes she would even skip the bacon even though I am pretty sure that is his favorite part!

    I myself have used ground turkey and pork, ground beef or any combination I happen to have around.  Really.  They all taste great!

    Grandma's Souper Meaty Surprise can also be made with any condensed soup you prefer!  I don't think it matters much.  They all taste great!

    Ingredients in Grandma's Souper Meaty Surprise

    • ground beef
    • ground pork
    • peameal, canadian or back bacon
    • condensed cream soup, mushroom, celery or tomato
    • onion
    • peppers
    • mushrooms
    • garlic
    • salt
    • pepper
    • crushed red pepper flakes
    • butter 
    • oil

    How to make Grandma's Souper Meaty Surprise

    In a large skillet, over medium heat, melt butter and cook bacon until browned.

    Remove bacon from pan and place on paper towel to drain.

    In the meantime, in a large pot, cook ground beef and pork until no longer pink. Drain if necessary, and return to the large pot.

    Add chopped bacon to the large pot as well.

    In the same skillet, over medium heat, heat some oil and wait for it to shimmer or when a drop of water flicked in it dances.

    Add prepared vegetables and cook until tender.

    Add garlic right before you are finished cooking the vegetables.

    Dump vegetables into the large pot.

    Add cream soups to the large pot and stir to combine.

    Heat and season with salt, pepper and crushed red pepper flakes to taste.

    Serve over rice or pasta. Enjoy!

    • large skillet

    Ingredients
      

    • 1 pound beef, ground
    • 1 pound pork, ground
    • ½ pound peameal, canadian or back bacon, diced
    • 2 cans condensed cream of mushroom, celery or tomato soup
    • 2-3 cups any combination of finely chopped onion, peppers and mushrooms (or any other vegetable you want to include) more or less to taste
    • 2 tablespoons garlic, minced more or less to taste
    • ½ teaspoon salt -
    • ¾ teaspoon pepper -
    • 1 teaspoon dried crushed red pepper flakes - more or less to taste
    • butter -
    • olive oil or another vegetable oil -
