Ground beef is my absolute favorite thing to cook in my crockpot. It’s so easy and versatile, and I’ve actually tried quite a few recipes that have become huge hits.
My crockpot hamburger soup and cheesy chili mac are both comfort foods that I end up making often for family meals. For special occasions or when you're hosting, this French onion beef casserole always makes an impression.
This time, however, I wanted to try a fusion recipe using ground beef as the hero ingredient, and that’s when I tried this taco potato casserole.

Ingredients
- Beef: I like using lean ground beef for less grease.
- Onions: Adds hints of sweetness and umami flavor.
- Potatoes: I used frozen diced potatoes here. You can swap them out for shredded potatoes if you want the casserole to have a different texture.
- Eggs: I added eggs to bump up the protein content and also to lend the casserole a nice bit of structure and some moisture.
- Seasonings: To season the ground beef hash, I just used some taco seasoning and crushed black pepper.
- Condensed cheddar cheese soup: You’ll need a can of this! It adds a beautiful, rich and cheesy flavor and that saucy texture to the casserole.

Variations
- Mix-ins: You can also add in other veggies (onions and bell peppers are great) or a can of diced tomatoes to add some extra flavor to the crockpot hashbrown casserole.

How to Make Taco Hashbrown Casserole in the Crockpot
To make this crockpot casserole, start by greasing your cast iron skillet with some cooking spray and getting all your ingredients ready.
Step 1: Brown the beef. Add the onions and ground beef to the skillet and cook over medium heat until the meat has browned and the onions are tender.
Step 2: Prepare potato mixture. Combine the potatoes, pepper and taco seasoning in a bowl and mix well. Mix this with the ground beef mixture.
Step 3: Transfer to your crockpot. Transfer the potato and beef mixture into the crockpot.
Step 4: Mix the cooking liquid. Whisk together the eggs and add in the cheese soup in a bowl.
Step 5: Add eggs to the crockpot. Pour this over the beef mixture and stir until everything is mixed well.
Step 6: Cook. Cover and cook on high for about 2 hours. Then serve and enjoy!

Storage Directions
- Storing: Store your leftovers in an airtight container in the refrigerator for up to 4 days, and then reheat them whenever you want to.
- Freezing: You can freeze the casserole if you want it to last longer, or meal prep it. Allow it to cool down completely and then transfer it to a freezer safe container, label it and pop it in for up to 2 months. Then, when you want to reheat it, allow it to thaw overnight and then microwave it.
- Reheating: Reheat the slow cooker hamburger hash in the microwave, pausing every 30-45 seconds, until nice and warm.
Serving Suggestions
This Taco hashbrown casserole is super filling and can be enjoyed on its own. You can also top it with your choice of toppings if you want to make it look fancy, or serve it with a veggie side dish like slow cooker corn on the cob, balsamic green beans, or some sweet and sour green beans and corn.
I also love drizzling some avocado hot sauce or homemade jalapeno hot sauce over my portion to add an extra kick of heat to it.
You can enjoy the taco crockpot hashbrown casserole on its own, or top it with crushed Doritos, sliced avocados, shredded cheese or sour cream. Finish it off with some smoked guacamole and lots of chopped cilantro.

Crock Pot Taco Hashbrown Casserole
Ingredients
- 1 pound ground beef
- 1 small onion chopped
- 4 cups diced potatoes frozen
- 2 tablespoons Taco seasoning blend
- 1 teaspoon black pepper
- 6 large eggs
- 1 can condensed cheddar cheese soup
Instructions
- In a large skillet, over medium to medium-high heat, add onions and ground meat. Using a wooden spoon, break the beef into small pieces.
- Cook ground beef until no longer pink and onions are tender. Drain and put mixture in a large mixing bowl.
- Add potatoes, Taco seasoning and pepper.
- Stir until blended together.
- Spray slow cooker with cooking spray. Add meat mixture to slow cooker.
- In a medium bowl, using your whisk, blend eggs and cheese soup together until smooth.
- Pour over top of beef mixture. Stir until incorporated.
