I served up this smoked guacamole recently for a group of family and friends and they absolutely loved it! Smoking the ingredients for guacamole really adds a unique flavor to guacamole making it taste even better!!

Smoked Guacamole Recipe
This was inspired by my other guacamole recipe on Kitchen Divas, and pairs well with this amazing homemade queso dip recipe and crispy tortilla chips.
You can add it to all your Mexican food favorites, making each of them taste even better. I love to add a spoonful on top of creamy chicken enchiladas, shredded chicken tacos, or even smoked pork tacos.
It makes a delicious spin on plain old guacamole that's sure to be a hit for parties or any get-together!

This easy smoked guacamole recipe relies on mostly fresh, easy-to-find produce you can pick up at any grocery store.
- Limes
- Garlic cloves
- Jalapeños

Instructions

Step 1: Prep the Smoker and Vegetables
Get the smoker ready to go at a temperature of 180 degrees F and preheat with lid closed for 15 minutes.
Prep all the vegetables.
- Slice avocados in half and remove the pit.
- Slice jalapeños in half and remove the seeds.
- Coarsely chop garlic cloves.
- Dice the red onions and tomatoes into small pieces.
- Juice the limes.
Step 2: Start Smoking
Pour the freshly squeezed lime juice into a shallow baking dish or foil sheet pan and add the garlic.
Place the baking dish of garlic and lime juice into the smoker. At the same time, place the jalapeño slices cut side up directly onto the grill grates.
These ingredients will smoke for 30 minutes.
Step 2: Add the Avocados to the Smoker
After the lime juice and jalapeños have been smoking for 15 minutes, place the avocados directly onto the grill grates cut side up. Smoke for 15 minutes.
Step 3: Remove from the Smoker
Remove all the ingredients in the smoker from the grill and let cool for 10 minutes.
Step 4: Assemble the Guacamole
When cooled and you can safely handle, finely mince the jalapeños.
Remove the peel from the avocados and place them in a large bowl. Mash the avocados using a fork, then add in the lime juice and garlic, diced tomatoes, diced red onion, and jalapenos. Mix everything together.
Hint: Roll your limes on the counter or table using the palm of your hand firmly on the table before cutting them in half. This loosens up the juices on the inside making them easier to juice. I like to use a citrus juicer which makes juicing limes even easier.

Substitutions
Don't have the correct ingredients on hand? Or want to change something up? Here are some helpful tips for you to change this smoky guacamole recipe.
- Fresh jalapenos - Using fresh really is best but if you can't get them swap out with another spicy chile or pickled jalapenos. If using pickled, I suggest not cooking them in the smoker. Just dice up and add with the tomatoes and red onon at the end.
- Red onion - White onion works too!

- Spicy - For an extra spicy guacamole swap out the jalapenos for habanero. You will likely need less habanero as it's quite a bit more spicy than the jalapeno. The best way to judge is add a small amount and taste. Keep repeating until it gets to the level you want.
- Fruity - Dice up pineapple or mango and mix it into the guacamole for a sweet and spicy version. It's fantastic with grilled fish or shrimp tacos.
- Kid friendly - Skip the jalapenos or serve on the side.

Avocados turn brown when exposed to air. The lime juice slows this process down, but the longer it sits the more likely it is to change colors.
The best way to store guacamole if you make it in advance is in an airtight container. Press a piece of plastic wrap over the top of the guacamole surface and then secure the container lid in place. This extra step will help prevent some of the discoloration that occurs on top.
Guacamole will last 2-3 days in the refrigerator but might not maintain its bright green color.

You likely don't need a lot of help making this smoked guacamole recipe, but here are a few of my top tips to help you out.
- Use a shallow, wide dish to cook the lime juice in the smoker. Having a large surface area allows more smoke to penetrate the lime juice giving it a smokier flavor. Just be sure the liquid is at least one-half inch deep.
- Use fresh lime juice.
- Leave the avocados in their skin in the smoker. Place them in with the skin side touching the grates.
- Be careful handling the jalapenos. If possible use gloves to prevent transfer of the spicy juices or oils that may linger on your hands. Use a spoon to scrape the seeds out of the jalapenos to avoid touching them.
- Preheat the smoker for at least 15 minutes prior to starting cooking.

The easiest way to keep guacamole from turning brown is to make it as close to the time you plan to eat it. If that isn't possible, make sure to add plenty of lime juice to slow down the time it takes the avocado to turn brown and cover the surface of the guacamole with a piece of plastic. If the top still turns slightly brown you can easily scrape the top off to unveil the bright green avocado below.
My first recommendation is to use any other fresh chile instead. If that isn't available, these dried spices make another option: cayenne pepper, red pepper flakes, chipotle chili powder, Sriracha, or red pepper sauce.
