Bacon Cheeseburger Muffins are delicious, no matter which ground meat you use! Lots of cheese, bacon and more in every bite!

My friend and I worked for years to perfect what I now call Dave's Bacon Cheeseburger Muffins. They are a real treat. Now I make these absolutely delicious muffins and think of the old days with a big smile on my face.
I try to always use both pork and beef. Dave always preferred the old cheddar, I like the medium cheddar. You can use whichever cheese you prefer to make Dave's Bacon Cheeseburger Muffins. These bacon cheeseburger muffins freeze well, even though there are rarely any left to freeze. I share this recipe with you and hope you enjoy them as much as we all do.

My dear friend Dave and I worked on this recipe for a long time over the years. We always tinkered with it until we decided it was perfect!
After Dave passes away, I would make this recipe and have a huge smile on my face. Oh what great memories are tied to this recipe!
This recipe calls for a mixture of beef, turkey, or pork. My family and I prefer the juiciness of the beef and pork mixture probably because Dave did too. You can try different mixes until you find your favorite!
You also coat the top of the muffin with ketchup and mustard mixed together. My favorite part of the muffin is all of the goodness you put on top of the muffin! You top each muffin with french fried onions, bacon and cheese. Just like you would a burger! This recipe for Dave's Bacon Cheeseburger Muffins is a definite keeper!

Ingredients for Bacon Cheeseburger Muffins
- ground meat, your favorite variety or combination
- bacon
- crumbs
- egg
- mayonaise
- worcestershire sauce
- salt
- pepper
- ketchup
- mustard
- onion
- crispy fried onions
How do I make Bacon Cheeseburger Muffins?
Cook bacon and chop into small pieces. (keep approximately 2 slices of the chopped bacon aside for decoration)
In a large bowl combine ground meat, bacon, cheese, eggs, bread crumbs, mayo, Worcestershire sauce, salt and pepper. Gently combine until just mixed. If you over mix, you will will end up with heavy, dense meatloaf muffins.
In a small bowl combine ketchup and mustard.
Stir ¼ of the mixture (about 2 tbsp) into meat mixture and set aside the rest until later.
Divide the meat mixture evenly among the number of muffin cups in your muffin pan (6 or 12).
Spread remaining ketchup/mustard mixture over the tops of each meatloaf muffin.
Bake.
Remove from oven and sprinkle crispy fried onions over each muffin, then cheese and little bacon piece on top.
Bake or broil until cheese is melted.
Remove from pan as soon as possible and place on cooling racks. Do not let these muffins cool down in the pan. If you do not have a rack place the muffins on a plate covered with paper towel to cool down. Enjoy!
Can I make Cheeseburger Muffins ahead of time?
Definitely! I try and do this as frequently as possible.
Prepare recipe until you have completed step 7. Cover muffin pan and glaze with saran wrap and place in your refrigerator until about 30 minutes before you want to bake the Bacon Cheeseburger Muffins.
When getting ready to bake, place muffins on your counter. You want to try to get them as close to room temperature as possible before baking.
Apply glaze to each muffin.
Bake for 25 or 40 minutes, depending on the size of your pan.
Remove from oven. Sprinkle with crispy onions, chopped bacon and cheese.
Bake for another 5 minutes or until cheese is melted and browned.

I always make enough that there are leftovers in my fridge for the next day. They always get eaten up! Baked Cheeseburger Muffins should be stored in an airtight container in your refrigerator and will last between about 4 days. Any leftover glaze should be stored in an air tight container as well, in your refrigerator.
How to reheat Cheeseburger Muffins
Oven
Remove baked Bacon Cheeseburger Muffins from your fridge and place them on a platter on your counter while your oven preheats. The goal her is to get the muffins as close as possible to room temperature. Place your meatloaf muffins on the counter while your oven preheats.
Pop them back into their muffin pan or on a baking sheet.
Bake at 350 degrees until heated through, between 15 and 20 minutes
Microwave
Place a couple of muffins on a microwave safe plate and heat for 60 seconds. Continue heating in 30 second intervals until heated through.
Can I freeze Cheeseburger Muffins?
The amazing thing about this Bacon Cheeseburger Muffins recipe is that you can freeze your muffins both before and after baking them. I ALWAYS do after baking them. This is my go to freezer recipe when I need dinner done quickly and without any fuss! My son also loves grabbing a couple, out of the freezer, throwing them into the microwave, and then in to a bun for his lunch.
How to freeze raw Cheeseburger Muffins
Follow the recipe instructions through to step 7. Right before you are going to put your muffins into the oven. Do not glaze or put crispy onions and cheese on top.
Put remaining glaze into a bag and into the freezer to use when you bake your muffins.
Place your muffin pan in your freezer to freeze your unbaked muffins, just a few hours.
Remove Cheeseburger Muffins from your freezer and place them in a large resealable freezer bag or an airtight container.
Store up to 3 months. I have never had them in the freezer for that long. You likely won't either.
How to freeze baked Cheeseburger Muffins
Follow the recipe instructions until step 9 or your cheeseburger muffins are cooked without the extra crispy onions, bacon and cheese.
Allow muffins to cool, on a rack, until room temperature.
Place muffins into a clean muffin or baking pan and into your freezer until frozen, a few hours.
Remove muffins from freezer and and place them in a large resealable freezer bag or an airtight container.
Store up to 3 months.
How to reheat frozen Cheeseburger Muffins
Frozen raw Cheeseburger Muffins
Remove exact number of muffins you need from your freezer and glaze the night before you want to make them and place them in your fridge to defrost.
Place muffins on a platter 30 minutes before you want to place them in the oven. You want them to be as close to room temperature as possible.

Evenly top each meatloaf muffin with ketchup glaze.
Bake at 350 degrees, until heated through, or until the center reaches 170 degrees, either 25 or 40 minutes, depending on the size of your pan.
Remove from oven.
Sprinkle crispy fried onions on top and then some cheese and chopped bacon.
Bake for another 5 minutes, or until cheese is melted and browned.
Frozen baked Cheeseburger Muffins
Remove exact number of muffins you need from your freezer and glaze the night before you want to make them and place them in your fridge to defrost.
Place muffins on a platter 30 minutes before you want to place them in the oven. You want them to be as close to room temperature as possible.
Place muffins back into their lightly greased muffin pan.
Bake at 350 degrees, until heated through, or until the center reaches 170 degrees, between 15 and 20 minutes.

Tips for making the best Cheeseburger Muffins
- Lightly coat your muffin pan with cooking spray for easy clean up
- Use your favorite ground meat or meats. I love using ground turkey and ground pork together. The ground pork keeps the ground turkey from becoming dry.
- Remove the muffins from your pan as soon as possible and place on cooling racks. Do not let these muffins cool down in the pan. If you do not have a rack place the muffins on a plate covered with paper towel to cool down. You don't want the muffins absorbing any unnecessary grease from the bottom of the muffin cup.

- 8 slices bacon, chopped, almost crisp more or less to taste
- 1 large egg
- ¼ cup breadcrumbs or panko
- ¼ cup mayonaise
- 1 tblsp Worcestershire sauce
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ⅓ cup ketchup
- 2 tblsp mustard
- 1 small onion, diced
- 1 can crispy fried onions
Instructions
- Preheat oven to 350 degrees.

- In a large bowl combine ground meat, bacon, cheddar, eggs, bread crumbs, mayo, Worcestershire sauce, salt and pepper. Gently combine until just mixed. If you over mix, you will will end up with heavy, dense meatloaf muffins.
- In a small bowl combine ketchup and mustard.
