    Awesome Shepherd's Pie Potato Boats

    These Awesome Shepherd's Pie Potato Boats are a fantastic meal. If you like Shepherd's Pie you wont be able to resist these. They taste so good.

    We have made them with ground turkey, ground beef and ground pork and they are always amazing. Pick a vegetable to include, pick your favorite cheese and meat and give them a try. You wont regret it.

    You can use whichever ground meat you have on hand and I have used them all at one time or another.  As far as vegetables go I usually use whichever vegetable I grab out of the pantry or the freezer.  Use your favorite or none at all.  That decision is up to you!

    If you have never tried making a baked potato with egg whites or olive oil brushed all over the skin, I highly recommend it. 

    I also roll the potatoes in sea or kosher salt, pepper, rosemary and thyme that I sprinkle across my cutting board.  My husband holds the coated potato and sprinkles the spices all over.  You don't want too much in any one spot!

    I wasn't kidding when I said you won't regret making these Awesome Shepherd's Pie Potato Boats.  They are definitely worth the effort!  

    Awesome Shepherd's Pie Potato Boats

    Ingredients in Awesome Shepherd's Pie Potato Boats

    Baked Potato

    • russet or large potatoes
    • egg whites or olive oil
    • thyme
    • rosemary
    • kosher salt
    • garlic
    • butter
    • cream or milk
    • salt
    • pepper
    • parmesan cheese
    • shredded cheese

    Shepherd's Pie Filling

    • ground beef, chicken, pork, turkey, or sausage
    • onions
    • worcestershire sauce
    • flour
    • beef broth
    • garlic
    • thyme
    • salt
    • pepper

    Options

    • mushrooms
    • corn
    • carrots
    • peas

    How to make Awesome Shepherd's Pie Potato Boats

    Preheat oven to 400 degrees.

    Wash potatoes and pat dry.

    Pierce potatoes with a fork.

    If desired whisk an egg white until frothy or use olive oil and brush the potatoes. Then roll the potato in a combination of kosher salt, ground black pepper, rosemary and thyme. I usually sprinkle spices on a cutting board and roll the potato around on it.

    Bake potatoes for about 60 minutes, until tender.

    Remove from oven and let sit until cool enough to handle.

    Adjust oven temperature to 350 degrees.

    Use a small knife and cut around the top of the potato. You are trying to make a bowl of sorts.

    Remove the top of the potato.

    Use a small spoon to scrape out the inside of each potato into a mixing bowl, leaving a thin edge for support.

    Place potato pulp in a mixing bowl. Mash to desired consistency. Use a handheld mixer if possible.

    Add in butter, cream, garlic, parmesan, salt and pepper. Set bowl aside.

    In a large skillet, cook your ground meat until it just starts to crumble; there will still be some pink.

    Add in your chopped onion and if using raw carrots or raw mushrooms put them in now.

    Cook for about 10 minutes.

    By now your meat will be completely brown and crumbled and vegetables should be tender.

    Sprinkle flour on top of meat mixture.

    Add in your minced garlic and cook until fragrant, just a minute.

    Stir in Worcestershire sauce, beef broth, and canned or frozen corn or peas.

    Let simmer for a few minutes.

    Season with thyme, salt and pepper to taste.

    Simmer on low. Stirring occasionally.

    Arrange hollowed potatoes in a large baking dish.

    Fill potatoes up to ⅔ full with meat mixture.

    Place mashed potatoes into a resealable bag and push to the bottom corner.

    Cut one corner.

    Squeeze out mashed potato onto the top part of the potato on top of the meat mixture.

    If no bag available simply spoon potato mixture on top of meat mixture.

    Sprinkle with cheese.

    Approximately ¼ cup per potato.

    Heat in oven for about 15 minutes.

    Then turn oven up to broil until cheese is nicely browned.

    Serve immediately and ENJOY!!!!

    Ingredients
      

    • 4-6 medium-large russet potatoes, unpeeled
    • 2 or 4-6 tblsp egg whites or olive oil
    • 1 tblsp thyme
    • 1 tblsp rosemary
    • 4 tblsp kosher salt -
    • 2 garlic, minced
    • 4 tblsp butter, melted (more or less to taste)
    • ⅓ or ¼ cup cream or milk
    • salt and pepper to taste
    • ¼ cup parmesan cheese grated
    • 1 cup shredded cheese

    Shepherd's Pie Filling

    • 1 pound ground chicken, ground turkey, ground beef, ground pork, or, ground sausage
    • medium onion, chopped
    • 2 tablespoons Worcestershire sauce
    • 1 tblsp flour

    • 2 tblsp garlic, minced

    • 2 cups mushrooms optional
    • 1 cup corn frozen or canned - (optional)
    • 6 carrots peeled and diced - (optional)
    • 1 cup peas - frozen or canned - (optional)

    Instructions
