From Our Kitchen to Yours

In his younger days, my son was never big on onions-until I served him this beefy casserole. I can still picture the scrunchy face he made when he sniffed the plate and declared, "Ewww…I hate onions!" But once I told him it had some of his favorite things-savory ground beef, tender noodles, and a creamy sauce-he gave it a tiny taste.
That one bite turned into an empty plate, and before I knew it, he was asking for seconds with a big smile. From that night on, this family-friendly comfort food casserole became one of our weeknight staples. Ingredients

- Egg noodles: The curly variety holds the creamy sauce best, but any pasta works. Swap in gluten-free noodles if needed. For more creamy noodles try this million dollar chicken casserole!
- Ground beef: Use 80/20 or 90/10 for the right balance of flavor and tenderness. Leaner blends can make the casserole a little dry.
- Creamy base: Sour cream and cream of mushroom soup give the casserole its classic creamy consistency that ties everything together, and a bit of tang too! You can substitute cream of celery or cream of chicken if you prefer.
- French onion dip mix: Usually found in the seasoning aisle. It packs in all the savory onion flavor you want in a French onion casserole, just like in our French onion baked chicken recipe.
- Sherry: Just a splash deepens the flavor, giving this casserole that French onion vibe. You can skip it if you don't cook with alcohol.
- Worcestershire sauce: Adds umami and rounds out the beefy flavor.
- Gruyère cheese: The sharp, nutty bite of Gruyère melts beautifully and is a traditional topping for French onion soup. Feel free to use mozzarella, Colby Jack, or cheddar if that's what you have.
- French's fried onions: The crunchy topping that makes this casserole irresistible-like the cherry on top, but savory.
See the recipe card below for the exact quantities of each ingredient.
Variations
- Leaner protein: This French onion casserole also works beautifully with ground turkey or ground chicken. You'll still get that creamy, savory flavor, but with a lighter twist.
- Lower in fat: Want a slimmed-down creamy beef casserole? Swap in low-fat sour cream, reduced-fat cream of mushroom soup, and use the leanest ground beef (or ground turkey) you can find.
- Mushroom boost: Stir sliced mushrooms into the beef mixture for extra depth and a little veggie power. It makes this feel like a cross between a hamburger noodle casserole and a classic mushroom bake.
- French Onion Dip shortcut: Instead of the dry onion soup mix, use a tub of French Onion Dip plus 1 cup of sour cream. It adds tangy, onion-forward flavor without needing extra seasoning packets.
- Spice it up: If you like a little heat, stir in a pinch of cayenne pepper, a splash of hot sauce, or even some diced jalapeños for a zesty spin on this easy weeknight casserole.
How to Make French Onion Ground Beef Casserole
To get started, cook the noodles according to the package directions, but remove 3 minutes earlier than instructed, and drain. You will also want to brown the ground beef and drain off any excess oil as well as preheat the oven to 350°F and spray your baking dish with cooking spray.

Step 1: Mix the base. Stir together the cream of mushroom soup, sour cream, French onion dip, sherry, Worcestershire sauce, and cooked ground beef in a large mixing bowl.

Step 2: Combine. Add the noodles and toss to coat all the noodles.

Step 3: Assemble. Add the beef mixture to your baking dish. Sprinkle the grated cheese evenly over the pasta.

Step 4: Finish it off. Add the fried onions over the top of the casserole.

Step 5: Bake. Cover with a piece of tinfoil over the casserole and bake for 20 minutes. Then remove the tinfoil and finish baking until hot and bubbly.

Step 6: Serve. Serve immediately with a side of these old-fashioned cucumber and onions in vinegar or a simple garden salad.
Recipe Tips
- Cook noodles just shy of al dente: Leave your egg noodles slightly undercooked. They'll soak up the creamy sauce and finish cooking in the oven. No mushy pasta here!
- Drain the beef well: After browning the ground beef, drain off the excess fat. This keeps your French onion ground beef casserole flavorful without turning greasy.
- Layer for best texture: Spread the beef mixture evenly before adding cheese and fried onions. This helps every bite have the perfect balance of creamy filling and crunchy topping.
- Cheese matters: Gruyère is the gold standard for French onion flavor, but if you're swapping in cheddar or mozzarella, shred it fresh. Pre-shredded cheese often has anti-caking agents that keep it from melting as smoothly.
- Store leftovers: Store in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- A crisp green salad like this crunchy broccoli salad for something fresh and light.
- Simple vegetables pair perfectly. We love these skillet baby bella mushrooms and quick balsamic green beans.
- Enjoy some warm air fryer dinner rolls or garlic bread to soak up the creamy sauce.
French Onion Soup Casserole Recipe FAQs
Yes! The entire casserole can be assembled up to 24-48 hours in advance and stored in the refrigerator. When you're ready to cook, remove it from the fridge and let it sit for 30 minutes on the counter before cooking it in the oven. Since the dish is cold, extend the time the casserole cooks covered with foil.
Yes! Assemble the casserole, but don't bake it. Cover it tightly and freeze it for up to 2 months. Thaw overnight in the fridge, and then bake as directed, extending the covered cooking time slightly.
Since the pasta continues to cook (and soften) in the oven, you want to undercook it when boiling it in water. I find 2-3 minutes less than the package directions is perfect.
For the crispiest topping, reheat in the oven at 350°F (175°C) for 15-20 minutes. If you're short on time, the microwave works too, but the fried onions won't stay quite as crunchy.
