    My friend over at Maria's Mixing Bowl has this incredible French Onion Chicken recipe that I have adapted slightly because we LOVE gravy and we wanted more. We wanted a little more onions too. 

    We took her fabulous recipe and made it SPECTACULAR. I'm not even kidding. It's absolutely loaded with delicious French onion flavor, tons of gravy, and a hearty portion of onions. It's quickly become one of our favorite chicken dishes to make now. We love it that much.

    As far as weeknight dinners go, if your family enjoys baked chicken breast, this one is simply a definite keeper. Picture delicious chicken breasts surrounded by fried onions, smothered in a flavorful gravy, topped with cheese.

    I mean what could be better?

    Serve this delicious oven-baked chicken on mashed potatoes or rice, with any vegetable or salad, and dinner is ready within about 45 minutes, from start to finish. 

    Being so easy to make and tasting so outrageously good makes this recipe perfect for special occasions, too. Serve it up for a special birthday or holiday meal, and let everyone think you spent hours in the kitchen.

    You need several ingredients to make this delicious French onion chicken bake recipe, and while you may look at this list at first and feel a bit daunted, don't worry.

    This recipe comes together so quickly and easily. Most of these ingredients just need to be cooked up in the gravy before baking. It really is a simple affair that you'll be able to do without any problems. I promise.

    • large white onions
    • salted butter
    • beef broth
    • chicken breasts
    • olive oil
    • salt
    • black pepper
    • thyme leaves, dried
    • all-purpose flour
    • mozzarella provolone cheese (depending on how many chicken breasts)
    • swiss cheese (depending on how many chicken breasts)

    Making French Onion Chicken Bake

    Making this tasty French onion chicken skillet is a very straightforward affair. Simply sautee your onions. Then, season your chicken breasts and cook for about five minutes per side in the skillet.

    Remove the chicken, and put the onions back in the skillet, add the flour and broth, and stir until thickened. After that, put the chicken back, top with cheese, and bake.

    To ensure that you create the best French onion skillet possible, I have a few tips. Follow these suggestions, and you'll make the tastiest chicken recipe you've ever had. As this is already an easy recipe, you'll find these tips to be extremely simple. 

    Don't Overcook the Chicken in the Skillet

    When you're cooking the chicken in the skillet, make certain that you pay attention to how long you cook it per side. Five minutes of cooking time on each side should give it a wonderful golden brown glow. That's all you're looking for at that point.

    Remember, you're not cooking the chicken through. You're simply getting that nice golden color and sealing in the juices during the baking process. Overcooking the chicken in the skillet will lead to tough chicken later.

    This french onion chicken bake recipe will keep in the refrigerator for up to 4 days in an air-tight container. I wouldn't recommend it freezing this French onion chicken skillet.

    While you can freeze the chicken easily once it's cooked, the rest of this dish will not hold up well in the freezer. It's far better to simply eat it all within that 4-day window. 

    Reheating French Onion Chicken Skillet

    When you reheat anything with meat in it, you have to be careful that you don't reheat too much to overcook or dry out the meat. Low and slow is what you're going to need to do to keep the meat tender and delicious.

    Putting this dish in the oven and reheating it on low heat can be a great way to eat the next day. You can also add to the microwave and reheat but just keep an eye on it as the microwave is a lot more powerful than you might realize!

    • Measuring cups and spoons
    • large skillet Oven Safe Skillet, hold as many chicken breasts as needed
    • whisk
    • wooden spoon
    • mixing bowl
    • Parchment paper or aluminum foil

    Ingredients
      

    • 3 large white onions, sliced
    • ⅓ cup salted butter
    • 2 cups beef broth
    • 4-5 chicken breasts, pounded
    • 3-4 tablespoon olive oil
    • 1 ½ teaspoon salt
    • 1 teaspoon black pepper
    • 1 ½ teaspoon thyme leaves, dried
    • 3 tablespoon all-purpose flour
    • 4 slices deli-style mozzarella or provolone cheese depending on how many chicken breasts
    • 4 slices deli-style swiss cheese depending on how many chicken breasts
    • fresh thyme, if desired for serving

    Instructions
     

    • Get out and measure your ingredients.
    • Place butter in an oven-safe skillet over medium high heat.
    • Wait until melted.
    • Add onions.
    • Stir while cooking, about 15 minutes until softened and tender.
    • Remove onions from skillet and set them aside.
    • Turn oven on to 350 degrees.
    • Coat chicken breasts with olive oil and season with salt, pepper, and dried thyme leaves. Cook chicken in skillet for about 5 minutes per side.
    • Move chicken to a plate and cover with a paper towel or aluminum foil.
    • Return onions to skillet.
    • Sprinkle with flour.
    • Stir and cook for about 1 minute or two.
    • Pour in beef broth.
    • Stir until thickened.
    • Add chicken back to skillet and spoon sauce over the chicken.
    • Top with one slice of mozzarella or provolone and one slice of swiss on each breast.
    • Move skillet to a 350 degree oven and bake until cheese is melted and chicken is cooked through, about 8 to 10 more minutes.
    • Remove from oven and spoon more of the sauce over the chicken.
    • Top with fresh parsley, if desired, and serve hot with mashed potatoes or rice.
