    Easy Meaty Tater Casserole

    Easy Meaty Tater Casserole is full of ground beef, pork, chicken, sausage or turkey, some corn and beans and covered in tater tots, crispy fried onions and cheese! A great weeknight dinner option!

    This recipe has been around for years in one form or another. I make my Easy Meaty Tater Casserole when I am in a hurry and don't want to do any thinking. In little time you end up with a delicious casserole that everyone loves, including myself!

    Sometimes I just feel like tater tots and this is one of my favorite weeknight dinners that include them!  Easy Meaty Tater Casserole is a great recipe because I can use any ground meat I have on hand and any canned vegetables I have around.  I have used carrots, mushrooms, peas as well as the corn and beans! All taste great!

    For years I didn't serve this Easy Meaty Tater Casserole with anything else.  Not salad.  Nothing.  Now that we are getting older I find I am always including salad with everything, including this dish!

    It's true, I actually am enjoying eating different salads now but my favorite part of this dish is definitely the topping.  The cheese, crispy fried onions and tater tots are so tasty, almost too good for words!  I just love it!

    This Easy Meaty Tater Casserole is total comfort food for me!  I still laugh remembering my son laying all of the tater tots in perfect rows, all by himself, across the top!  I will never forget the smile on his face, such a sense of accomplishment!

    Ingredients for Easy Meaty Tater Casserole

    • ground beef, pork, veal or turkey
    • onion
    • corn
    • beans
    • condensed cream soup
    • pepper
    • dry onion soup mix
    • ketchup
    • worcestershire sauce
    • shredded cheese
    • crispy fried onions
    • tater tots

    How to make Easy Meaty Tater Casserole

    In a large skillet cook ground meat and onion until meat is no longer pink.

    Drain if necessary or desired. 

    Add the soup, pepper, onion soup mix, ketchup, Worcestershire sauce, corn and beans to the skillet.

    Stir until blended.   

    Spoon the mixture into your prepared pan and flatten it as evenly as possible. 

    Sprinkle shredded cheese on top of the meat mixture.

    Arrange the tater tots in one layer on top of the cheese. 

    Bake. 

    Remove pan from oven.

    Sprinkle crispy fried onions all over the top of the tater tots and sprinkle more cheese on top.

    Return pan to oven and increase the temperature to broil. 

    Remove from oven after a few minutes when cheese is nicely browned on top.

    Allow to rest for 5 minutes before serving.

    • 13 x 9 inch cake pan

    Ingredients
      

    • 2 pounds ground beef, pork, veal or turkey
    • 1 large onion, diced
    • 1 can (15 oz) corn
    • 1 can (14.5 oz) cut beans
    • 2 cans condensed cream of mushroom or celery
    • 2 teaspoon pepper
    • 1 pkg (lrg) Dry Onion Soup Mix
    • 3 tblsp ketchup
    • 3 tblsp Worcestershire sauce
    • 1-2 cups cheese, shredded, more or less to taste
    • ½ cup crispy fried onions, more or less to taste
    • 1 large bag tater tots, frozen approximately 4 cups

    • Preheat oven to 425 degrees.  Prepare a 13x9 inch pan lightly coated in cooking spray and set aside.   
    • In a large skillet, over medium to medium high heat, cook ground meat and onion until meat is no longer pink. Drain if necessary or desired. 
    • Add the soup, pepper, onion soup mix, ketchup, Worcestershire sauce, corn and beans to the skillet. Stir until blended.   
    • Spoon the mixture into your prepared pan and flatten it as evenly as possible. I usually take a spatula or wooden spoon and press the meat mixture down and slide the spoon or spatula across the top of it all.  It's never perfect!
    • Sprinkle shredded cheese on top of the meat mixture. Arrange the tater tots in one layer on top of the cheese.  Bake for 30 minutes. 
    • Remove pan from oven. Sprinkle crispy fried onions all over the top of the tater tots and sprinkle more cheese on top. Return pan to oven and increase the temperature to broil. 
    • Remove from oven after a few minutes when cheese is nicely browned on top. Allow to rest for 5 minutes before serving.  Enjoy!
