Sometimes we make it with Italian sausage, which my husband Ken prefers, and others we make it with honey garlic sausage which is my favorite. No matter which you make it, this sausage potato bake cooks up great!

- Cook your sausage until it's no longer pink.
- Combine the soup, milk, onion, corn, peas, salt, and pepper in a bowl.
- Add the meat and potato slices and stir to combine. Transfer the mixture to a casserole dish.
- Cover and bake. When it's cooked, uncover and top with cheese.
- Place back in the oven to broil until the cheese is melted and browned.

Storage
Refrigerator: Store leftovers in an airtight container for up to 4 days.
Freezer: Store in an airtight container for up to 3 months. The potatoes might be a bit mushier after freezing.

Can you make sausage and potato casserole in advance?
Assemble the entire casserole and refrigerate it for a couple of days until ready to bake. When ready to heat, allow it to sit on the counter for thirty minutes before baking so your container doesn't break in the hot oven. Since the casserole is cold, you will need to extend the cooking time by 15-20 minutes.

Equipment
Ingredients
- 1 pound ground sausage honey garlic or italian, casings removed or ½ inch slices
- 1 can (10 ¾ oz) condensed cream soup tomato, celery or mushroom soup, undiluted
- ½ cup milk
- 3-4 large potatoes peeled and sliced
- 1 large onion sliced
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups cheese shredded, use more or less as desired
Options (choose 1 vegetable)
- 1 cup peas canned, drained
- 1 cup corn canned, drained
- 1 cup beans canned, drained
- green onions thinly sliced, optional for serving
Instructions
- Set aside an un-greased 13 x 9 inch pan.
- In a large skillet, cook your sausage (or whichever ground meat you are using) over medium heat until no longer pink. Drain if necessary and set aside.
- In a large bowl, combine the soup, milk, onion, optional vegetable (if using) salt and pepper.
- Add your cooked ground meat and potato slices to your bowl and stir until the potatoes are coated and the meat is evenly distributed.
- Dump into pan. Cover with tinfoil and bake at 350 degrees for 1-½ hours or until potatoes are fork tender. I find that the cooking time will depend on which kind of potatoes you use. Just poke the casserole with a fork and if it goes in easily your potatoes are done and the casserole is almost ready!
- Uncover, sprinkle with cheese and broil for 5 minutes or until cheese is melted and brown. Let stand for at least 5 minutes before serving. Enjoy!

Was searching for a recipe today to try and figure out how i was going
to cook my honey garlic sausages for dinner tonight and stumbled upon
your recipe. I'm sure glad I did! Made it for dinner tonight and it was
fantastic. Followed your recipe to a T with the exception of one minor
detail. I put garlic powder on top prior to baking it for the hour and
half suggested. My husband even commented, not once but a few times
that it was very good and even said that it was the best I had made in
