Ingredients
To create mouthwatering Corned Beef Sliders, you will need the following ingredients:
- Sweet Hawaiian Rolls - Hawaiian rolls are a popular choice for making sliders, but you can also use dinner rolls or any small buns that are readily available at your local grocery store. You could also use rye bread for that matter.
- Butter - Melted butter adds a hint of richness to the sliders and helps achieve a deliciously golden crust on the rolls when baked.
- Swiss Cheese Slices - Swiss cheese not only adds flavor but also creates a gooey texture that complements the corned beef perfectly.
- Thinly Sliced Corned Beef - Use leftover corned beef or thinly sliced corned beef from your deli counter. Make sure to slice it thin, removing any large fatty pieces. Check out our easy Air Fryer Corned Beef or Instant Pot Corned Beef if you want to make your own corned beef. You can also use another meat like pastrami, roast beef, or even pulled pork as a substitute for corned beef if you prefer.
- Sauerkraut - Adding sauerkraut to your sliders brings a tangy element that offers a delicious contrast to the rich flavors of the corned beef and Swiss cheese. Use store-bought or our Homemade Sauerkraut. You can also use a creamy cabbage coleslaw on top of your sliders to add a delightful crunch to your corned beef. Simply shred cabbage, yourself or use a ready-made coleslaw blend and toss the cabbage in a coleslaw dressing.
- Thousand Island Dressing - Combines the creaminess of mayonnaise with the sweet tang of ketchup and the addition of sweet pickle relish. You can also use Russian dressing (which is basically thousand island with horseradish) or our homemade Reuben Dressing instead if you prefer. Other options include dijon mustard with mayonnaise, whole grain mustard, flavored mayo, ketchup, horseradish aioli or creamy garlic dressing. All work great.
- Garlic Powder - Sprinkling a small amount of garlic powder on top of your sliders tastes great but you can use onion powder instead, if preferred.
- Poppy Seeds - Use sesame seeds, flaked sea salt, or everything bagel seasoning instead.
See the recipe card below for the exact quantities of each ingredient.

Storage
Refrigerator:
Leftover sliders can be stored in an airtight container or wrapped in foil in the refrigerator for up to two days.
Freezer:
Make sure your Corned Beef Sliders are completely cooled before attempting to freeze them. Placing warm sliders in the freezer can cause condensation to form, leading to soggy buns when you reheat them.
Next, wrap each slider individually in plastic wrap or aluminum foil This helps to prevent freezer burn and maintains the integrity of each slider. Once wrapped, store the sliders together in a large, resealable plastic freezer bag or airtight container.
Reheat:
Simply place them in the oven until heated through and the cheese is melted.
If frozen, place the sliders in their container on a plate and let them thaw in the refrigerator for about 12 hours, slowly and evenly.
Alternatively, you can use your microwave's defrost setting to thaw the sliders. Place them on a microwave-safe plate and defrost for a few minutes, being careful not to overheat or cook them during the process.
Once your Corned Beef Sliders have thawed, preheat the oven to 350°F (175°C) and place them on a sheet pan or baking dish. Cover the sliders loosely with aluminum foil and bake. This will help retain moisture and prevent them from drying out. Reheat the sliders for approximately 15 minutes, or until the cheese is melted and the meat is heated through.
Make Ahead:
You can prepare the corned beef and coleslaw in advance, and then assemble the sliders and bake when you're ready to serve.
