    This Strawberry Chex Mix is the perfect treat any time of year. With sweet strawberry and white chocolate flavors, and a beautiful pink color, these are great for a summertime treat or a holiday snack. Enjoy them all year long!

    You can never go wrong with the sweet, fruity flavor of strawberries. We love to use them in all kinds of recipes. We're especially fond of using them in sweet treats like these strawberry cheesecake cookies and strawberry pizza.

    We also enjoy getting creative with the classic, chocolaty Chex Mix. It's easy to tweak this old-fashioned favorite to create completely new flavors like this S'mores Snack Mix and chocolate covered strawberry granola.

    We took that ease of prep and customization to heart and created this delicious strawberry Chex Mix. They're ready in just minutes and as pretty as they are tasty.

    Ingredients

    A quick trip down two aisles is all it takes to get everything you need!

    • Rice Chex: We use Rice Chex in this recipe but feel free to use your favorite Chex cereal as they all will work.
    • White Chocolate Chips: Use semi-sweet or milk chocolate chips if preferred.
    • Jell-O Powder: Use your favorite fruity Jell-O to create different kind of Chex mix, strawberry hot chocolate powder or finely crushed freeze dried strawberries instead.

    Variations

    • Chex Cereal: For a change use Crispix or Golden Grahams instead.
    • More Fruity Flavor: Add broken up freeze-dried strawberries, strawberry yogurt covered raisins or a splash of strawberry extract to the white chocolate for more strawberry flavor. Heck, dried blueberries taste great too.
    • More Add-Ins: Mini colored marshmallows or sprinkles add texture, flavor and color.
    • Salty Mix-Ins: Try adding pretzels or roasted nuts for a sweet and salty flavor. Chocolate covered pretzels or peanuts are a great addition too.

    How to Make Strawberry Chex Mix

    It doesn't get much easier than this snack mix. It's ready in just a few minutes.

    Step 1: Melt and Add Chocolate

    Add your Rice Chex to a large mixing bowl with the melted chocolate.

    Fold until the cereal is evenly coated in white chocolate.

    Powdered sugar and jell-o powder added to bowl before blending.

    Step 2: Add Jell-O, Sugar and Fold

    Add the strawberry Jell-O packet and powdered sugar.

    Fold again, making sure that the muddy buddies are evenly coated. Chill for 30 minutes before serving.

    Recipe Tips

    • Avoid Burning: Don't microwave your white chocolate for longer than 30 seconds at a time, in between stirring, to avoid scorching.
    • Be Gentle: Carefully fold your ingredients together rather than stirring them to keep your ingredients intact.
    • Stir Well: The Jell-O powder has a strong strawberry flavor so make sure it is evenly distributed throughout the chex mix.
    • Storage: Store for up to 5 days in an airtight container or in resealable bags at room temperature. Easy to make ahead for school lunches, a snack or a party.

    Strawberry Chex mix is a snack mix made with Rice Chex, melted chocolate, strawberry Jell-O and powdered sugar.

    Is this recipe gluten-free?

    It can be! Make sure you're using a gluten-free Chex cereal (like Rice Chex), and double-check all other ingredients you're adding for gluten.

    Why is my strawberry Chex mix sticky?

    If your kitchen is particularly warm, it will soften the white chocolate. If that happens, try storing Chex mix in the fridge until needed.

    • 6 cups rice chex
    • 1 ½ cups white chocolate chips
    • 1 pkg (3 oz) strawberry flavored Jell-O powder
    • 1 cup powdered sugar
