    This lemon Chex mix is sweet, tart, and crunchy, with the smooth flavor of white chocolate, bright citrus notes of lemon juice, the sweetness of white chocolate, and the crunch of Rice Chex. You'll eat them by the handful!

    There's nothing quite like a good Chex mix. The combination of crunch and sweetness always makes them a big hit, whether we're serving the classic easy chocolate chex mix or a variation like this chocolate cake chex mix.

    We recently created a delicious strawberry Chex Mix variation, and it got us thinking about what other fruity flavors might work well. That's when we decided to add a pop of lemon and make this lemon Chex mix.

    Why You Will Love This Recipe

    • Few Ingredients: It requires only a handful of ingredients that can be found in any grocery store like our Fluffernutter Chex Mix.
    • Easy: Simply melt the chocolate and mix all the ingredients together. That's all there is to it!
    • Bright and Sweet: The rich sweetness of the white chocolate and the bright pop of lemon work very well together and are always a hit.

    Ingredients

    A quick, in-and-out trip to the grocery store is all it takes to gather everything you need for this recipe.

    • Rice Chex: Both Corn Chex and Rice Chex work well for this recipe. You could also use a cereal like Crispix.
    • White Chocolate Chips: We prefer the white colored chocolate chips for this recipe but have used semi-sweet or milk chocolate chips in a pinch.
    • Lemon Juice and Zest: You can use bottled lemon juice if you prefer. However, we recommend freshly squeezed. You'll have to zest a lemon, anyway for best results.

    How to Make Lemon Chex Mix

    Four simple steps are all it takes to make this recipe.

    Step 1 Coat in Chocolate: Add your Rice Chex to a large mixing bowl with the melted chocolate and lemon juice. Fold until the cereal is evenly coated in white chocolate.

    Step 2 Add Lemon and Sugar: Add the lemon zest and powdered sugar. Fold again, making sure that the muddy buddies are evenly coated. Chill in the fridge for 30 minutes. Serve.

    Recipe Tips

    • Avoid Burning: Melting your chocolate at 30-second intervals prevents scorching, so don't go longer than that.
    • Be Careful: Gently fold your ingredients together when mixing them. This avoids crushing the Chex.
    • Storage: Store for up to five days in an airtight container or resealable bag at room temperature.

    Equipment

    • Large mixing bowl
    • Silicone spatula

    Ingredients
      

    • 6 cups rice chex
    • 1 ยฝ cups white chocolate chips
    • 2 tablespoons lemon zest
    • 1 tablespoon lemon juice
    • 1 cup powdered sugar

    Instructions
     

    • Melt your white chocolate chips in a microwave safe bowl. Heat the chocolate for 30 seconds at a time, stirring after each interval. Once smooth add lemon juice, lemon zest and stir.
    • Add your rice chex to a large mixing bowl with the melted chocolate. Fold until the cereal is evenly coated in white chocolate.
    • Add powdered sugar. Gently fold again, making sure that the muddy buddies are evenly coated. Chill in the fridge for 30 minutes. Serve.

      I really really enjoyed this lemon chex mix recipe, it's almost snacking on a
      tiny lemon meringue pie:) I am going to make this again and again!!!!
