It’s rich, refreshing, and perfect for enjoying on a hot summer day or any time you're in the mood for something sweet. Brownie and ice cream are a match made in heaven, and this recipe swirls both together for the ultimate treat.

    • Heavy cream: The heavy whipping cream gives the ice cream a perfectly creamy texture.
    • Cocoa powder: I add cocoa powder to the ice cream base to reinforce the chocolate flavor without making it overly sweet.
    • Sweetened condensed milk: This adds richness and sweetness, and gives you the right ice cream consistency after it freezes.
    • Brownie pieces: You may use store-bought brownies or make them yourself. Try this brownie recipe or use your favorite!
    • Caramel sauce: Any variety of caramel sauce would be perfect here. You could also try using a salted caramel sauce.

    How to Make Chocolate Brownie Ice Cream

    Once all of the ingredients are combined, you will have to wait for it to firm up in the freezer before you can give it a taste test. I promise it’s worth the wait!

    Step 1: Beat the cream and cocoa powder. Pour the heavy cream and cocoa powder into a large mixing bowl. Beat the cream with an electric hand mixer until the cocoa powder is well mixed and stiff peaks form. This usually takes about 5 minutes at medium-high speed.

    Step 2: Add the remaining ingredients. Add the sweetened condensed milk, brownie pieces, and caramel to the bowl. Gently fold these ingredients into the whipped cream until the condensed milk is fully combined.

    Step 3: Transfer and freeze. Pour the ice cream mixture into your 9x5-inch loaf pan and spread the top so it’s even. Cover it tightly with plastic wrap and place it in the freezer for 6 hours or until the ice cream is firm.

    This is typically because the plastic wrap isn’t tight enough. When you wrap the ice cream, make sure the plastic wrap is tight and touching the top to prevent ice from forming.

    • Pour your ice cream into a 9x5 inch loaf pan and cover the pan with plastic wrap to prevent freezer burn. Let your ice cream freeze for 6 hours, or until the ice cream is firm to the touch.
    • Scoop, serve, and enjoy!
