If you want an easy crockpot meal, I highly recommend this Ham and Rice Casserole. All of the ingredients are cooked completely in the slow cooker with minimal preparation needed. This is by far one of my favorite leftover ham recipes because it works great with any variety of diced ham.
This casserole has a velvety and creamy texture provided by the soup, sour cream, and mayonnaise. They add tons of moisture to the broccoli and rice as they cook to ensure they are perfectly tender every time.

Below is everything you need to make this ham and rice casserole in the crockpot. I find that all of the components are easy to find at any grocery store and some of them are pantry staples you may purchase extra of to keep in your kitchen.
- Cream of chicken soup: I love the creamy texture and savory flavor the soup adds to this ham and cheese casserole. Feel free to use cream of cheese or mushroom soup (or even broccoli) instead.
- Mayo and sour cream: This combo adds the perfect amount of richness and moisture. You can try this recipe with Greek yogurt instead of sour cream!
- Garlic: Fresh garlic adds great flavor and helps to enhance the flavors of the entire ham and broccoli casserole.
- Pepper: You get a lot of salty flavor from some of the ingredients so the only seasoning I add to this casserole is black pepper.
- Basmati rice: Any long-grain rice will work great in this recipe. I love basmati because it doesn’t take as long to cook as other varieties such as jasmine rice.
- Ham: Any diced ham is great. Purchase it diced or as a ham steak. You may even use leftover ham from another recipe like my Honey Mustard Ham.
- Broccoli: Ensure that you wash and chop the fresh broccoli into florets so they are easy to mix with the other ingredients.
- Butter: The melted butter is added to the top with the fried onion straws to help them brown and get a little crispy. I recommend unsalted butter if possible.
- Fried onion straws: These add a crispy texture to help break up the soft textures in the ham casserole with broccoli and rice.
- Cheddar cheese: I love the sharp flavor of cheddar cheese in this recipe. Colby Jack and Pepper Jack are great substitutes.

How to Make Ham and Rice Casserole
To get started on your crock pot ham casserole, cut your ham and broccoli so they are ready to add to the slow cooker. Then, spray the inside with nonstick cooking spray before adding any of the ingredients.
Step 1: Make the rice mixture. Combine the cream soup, mayo, sour cream, garlic, black pepper, and rice in a large mixing bowl. Stir until the ingredients are well combined.
Step 2: Add to the slow cooker. Spread the rice mixture out in the bottom of the slow cooker.
Step 3: Top with ham. Add the diced ham on top of the rice mixture.
Step 4: Add the broccoli, and cheese. Spread the broccoli on top of the ham, and then, top it with the shredded cheese.
Step 5: Add the butter and fried onions. Sprinkle in half of the fried onions and drizzle the melted butter over the top.
Step 6: Cook. Cover and cook on high for 2 ½ hours. Stir the casserole well and then add the remaining fried onion straws on top. Serve!
⭐️ Hint: Taste-test the rice if you are unsure if it’s fully cooked. Allow it to cook for a few extra minutes if it’s not quite done yet.

Storage Directions
- Storing: Store leftovers in an airtight container for up to 3 days in the refrigerator. Cool it completely and store it in a freezer-safe bag, flattening and removing the air from the bag. Freeze it for up to 2 months. Note the crispy onions won't be as crispy.
- Reheating: Use a microwave or a saucepan over low heat to reheat leftover ham casserole.
- Make Ahead: Make this recipe up to 24 hours in advance and store it in the refrigerator. You may also mix the ingredients and cover the mixing bowl as well. Add the crispy onions just before cooking.

Slow Cooker Ham and Rice Casserole

Ingredients
- 1 10.5-ounce can cream of chicken soup
- 1 cup mayo
- 1 cup sour cream
- 3 cloves garlic minced
- 1 teaspoon ground black pepper
- 1 ½ cups basmati rice uncooked
- 1 pound ham cooked, boneless, cubed
- 1 large broccoli head
- 4 tablespoons butter melted
- 1 cup fried onion straws
- ¾ Cup cheddar cheese shredded

Instructions
- Get out and measure all of your ingredients. Spray slow cooker with cooking spray.
- In a large mixing bowl, add cream of chicken soup, mayo, sour cream, minced garlic, pepper, and rice. Stir until blended. Add to the slow cooker.
- Cut ham into ½” cubes. Wash broccoli and cut into florets. Add cubed ham and broccoli to the top of the rice. Cover with cheddar cheese.
- Top with ½ of the fried onion. Pour melted butter over the top. Set the slow cooker to High, cover and cook for 2 ½ hours.
- Remove the lid and stir to combine ingredients. Top with remaining fried onion straws.
- Serve hot and enjoy very bite!
