How to Make Grilled Cheese in the Oven
This grilled cheese in the oven comes together in just 2 simple steps. By using hot baking sheets, the sandwiches cook evenly and develop perfectly crisp, golden bread with gooey melted cheese inside.
Preheat oven to 450 degrees F and adjust oven racks to middle and lower-middle positions. Place 1 baking sheet on each rack and allow sheets to heat up while you prepare your oven baked grilled cheese.

Step 1: Assemble the sandwiches. Combine the cheeses in a large bowl. Butter one side of each bread slice, then place 8 slices butter-side down. Top each with about ยฝ cup of the cheese mixture, then add the remaining bread slices with the buttered side facing up. Press gently to compact the sandwiches.
Carefully remove the hot baking sheets from the oven and place them on a cooling rack. Arrange the sandwiches on one baking sheet, using parchment paper if needed.

Step 2: Bake and serve. Return the baking sheet to the center oven rack and carefully place the second hot baking sheet on top of the sandwiches, rim-side up. Bake for 5 to 6 minutes, or until the bread is golden brown and the cheese is melted.
Remove the top baking sheet and transfer the sandwiches to a cooling rack. Let baked grilled cheese cool for a minute or two, then slice in half if desired and serve immediately.
