    This oven grilled cheese sandwich recipe makes it easy to feed a crowd using the grilled cheese in oven hack with two cookie sheets. The results are a perfectly ooey gooey classic grilled cheese that's so simple and so good.

    This baked grilled cheese sandwich recipe was handed down to me by my grandmother and let me tell you just how good it is.

    Dipped in her tomato soup, I was always begging for a second sandwich before I'd finished gobbling down the first one. Total comfort food.

    That's why she figured out how to make grilled cheese in the oven. I never had to wait for a second serving again.

    I still think of her when I use her special "gourmet grilled cheese method" to make oven grilled cheese and even tuna melts in the oven too.

    • Hearty white sandwich bread: A thicker sliced bread holds up better than thin.
    • Butter: Use salted butter for best flavor.

    • Add Meat: Everything from cooked whole or crumbled bacon slices to ham, salami, bologna, turkey or roast beef taste great.
    • Add Extra Fillings: Apples or pears, avocados, fried egg, pickles, onions, sliced tomatoes, sauteed mushrooms and onions, jalapenos, or pickles.
    • Add More Flavor: Add a schmear of mustard, red pepper jelly, tomato sauce, or pesto.
    • Swap the Bread: Use another hearty bread like whole wheat or multigrain, rye, sourdough, or your favorite.
    • Make Tuna Melts: Prepare our healthy tuna recipe or our copycat Subway tuna salad.
    • Flavored-Butter: Use a garlic butter or add chopped rosemary or thyme to butter before spreading it on the bread.

    How to Make Grilled Cheese in the Oven

    This sheet pan grilled cheese recipe is just as easy to make as the ingredient list is to gather up.

    It only takes a few simple steps. The highlights are below, but you can find the exact instructions in the recipe card at the end of the post.

    1. Shred the cheese and mix it in a bowl.

    1. Butter the pieces of bread and place bread slices butter side up on a preheated baking sheet.

    1. Add shredded cheese to the top of the bread.
    2. Add another slice of buttered bread on top with the buttered side facing up.

    2. Bake in the oven until golden brown.

    Storage

    Refrigerator: A grilled cheese can be stored safely in the fridge, in an airtight container, for five days.

    Freezer: A grilled cheese can be stored in an airtight freezer bag for up to 6 weeks.

    Reheat: Place refrigerated sandwiches on a sprayed, rimmed baking sheet and bake at 350° F for 10 minutes. Place frozen sandwiches on a sprayed, rimmed baking sheet and bake at 350° F for 12-15 minutes, flipping at the halfway mark.

    Can you make grilled cheese ahead of time?

    Yes, you can, you simply place the uncooked, prepared sandwiches onto a baking sheet and freeze them for a couple of hours. Then transfer them to freezer bags. If storing more than one sandwich in a container add a piece of parchment paper in between each one.

    When ready to cook, place the frozen sandwiches on a rimmed baking sheet and bake at 400° F for approximately 6-7 minutes per side or until golden brown. Use a spatula to flip them over.

    Ingredients
      

    • 2 ⅔ cups sharp cheddar cheese shredded
    • 1 ⅓ cups Gouda shredded
    • 16 slices hearty white sandwich bread
    • ½ cup butter, melted or 1 stick

    • Adjust oven racks to middle and lower-middle positions. Place 1 baking sheet on each rack and in preheated 450 degree oven. Allow sheets to heat up while you prepare your sandwiches.
    • Combine cheeses in bowl. Brush one side of each slice of bread with melted butter. Flip 8 slices over, top with ½ cup cheese mixture, and compact cheese lightly with hand. Cover with remaining bread slices, buttered side up, and press down gently.
    • Using oven mitts, remove hot baking sheets from oven and place on cooling rack. Arrange sandwiches on 1 sheet. Return to middle rack of oven, and carefully place second sheet over sandwiches, rim side up. Bake sandwiches until golden, 5 to 6 minutes. Remove top baking sheet and transfer sheet with sandwiches to cooling rack. Slice in half, if desired and serve.

      Loved the technique I could not believe it but we all ate grilled cheese together for the first time.
