I love wings, chicken tenders, casseroles, you name it, and I’m excited about it. What better way to feed my obsession than to create this gooey cheesy sandwich that is filled with spicy buffalo chicken. This grilled cheese is the best you will ever have.
This tasty sandwich combines two of life’s most delicious comfort foods and turns them into one amazingly yummy sandwich. After one bite of this cheesy sandwich, you will be craving this sandwich all the time.
My husband loves spicy foods. The more spice, the better. He always says there is no such thing as something too spicy. If you want to dial the heat down in your buffalo sauce, simply add some melted butter to your buffalo sauce to make it milder and less spicy.

History of Grilled Cheese
Grilled cheese originally made a debut in France. In the early 1900s, the French started making Croque Monsieurs. However, today’s version of a grilled cheese was traced back to the 1920s when Otto Federick Rohwedder invented white bread.
Then grilled cheese sandwiches were served open faced with shredded cheese. In 1949 Kraft singles were developed, which brought us the grilled cheese that is closed that we now enjoy.

Traditionally, buffalo chicken is chicken wings that have been deep fried and then tossed in a spicy buffalo sauce. Buffalo sauce is a mix of butter, hot sauce, and seasonings.
You can control the spice level of buffalo sauce by adding more or less butter to your hot sauce. I like a mild sauce. However, my husband wants a spicier house. Buffalo sauce ranges from mild to extremely hot and spicy.
What kind of chicken do I need
For this buffalo chicken grilled cheese recipe, I used rotisserie chicken. To use rotisserie chicken, you will need to pull the chicken off the bones and then shred your pulled chicken.
You will want the shredded chicken to be in smaller pieces so that it spreads better and fits better on your grilled cheese sandwich.
Can I cook this sandwich in the air fryer
Absolutely, you can cook this yummy sandwich in the air fryer. If you want to toast this sandwich up in the air fryer, it’s straightforward to do so.
All you need to do is preheat your air fryer to 370 degrees Fahrenheit and cook for about 10 minutes. Be sure to flip your sandwich after 5 minutes.

What kind of cheese works best in a Buffalo grilled cheese
You can use any type of cheese that you want in your grilled cheese sandwich. I personally prefer a mild good melting cheese. I’ve listed some good choices below for you.

- brioche sandwich bread
- unsalted butter
- shredded Monterey Jack cheese
How to Make Buffalo Chicken Grilled Cheese
Step 1. Place the chicken, cream cheese, and buffalo sauce in a medium-sized bowl and mix it all together until combined. You can do this with an electric hand mixer or a fork.
Step 2. Place a large skillet over medium heat. Smear ½ tablespoon of the butter on one slice of the bread on one side. Place the bread butter side down into the skillet. Top with ¼th of the chicken mixture, then ¼th of the cheese. Butter another piece of bread on one side. Place the bread butter side up onto the sandwich.
Step 3. Place a lid on the skillet and cook for about 2-3 minutes on the first side until golden brown. Then, press down on the top of the grilled cheese to kind of glue the whole sandwich together. Flip the sandwich, cover again and continue to cook another 2-3 minutes until golden brown on the bottom. The cheese is melted in the center.
Step 4. I can generally fit two sandwiches in the pan at once, so you will need to cook in batches. Serve with ranch or blue cheese dressing for dipping, optional.

Notes
- Do not overstuff your sandwich: Try not to use too much chicken and cheese. The sandwich will get soggy and not crispy if you use too much buffalo chicken.
- Use a low temperature: Cook your sandwich on a low to medium low heat. Yes, it takes longer for your sandwich to brown. But, a low heat allows your cheese to get nice and melted, giving you that ooey gooey cheese pull we all know and love. Using a high heat will cause your bread to cook too quickly or burn before your cheese is completely melted.
- Butter: For an extra tasty sandwich, butter on both sides of your bread. Before assembling your sandwich. This gives your sandwich a nice flavor boost.
- Cheese: If you want that gooey cheese pull, use Colby jack or Monterey jack cheese. Cheddar just doesn’t offer the same cheese pull. However, cheddar tastes terrific in this grilled cheese if you don’t care about the cheese pull.
- Use any sandwich bread you like, I just prefer brioche, and it gives an extra decadence to the sandwich.
- 2 tablespoons of buffalo sauce is a light amount with just a hint of spice in the sandwich. If you like more, add more. You can taste the chicken mixture before cooking the sandwiches to see if you want more kick since everything is cooked. The photos show 2 tablespoons of buffalo sauce used.
- I used a more mild cheese to really let the buffalo stand out more. Use any good melting cheese you prefer.
I just have to tell you that my mind was blown by how delicious this buffalo chicken grilled cheese sandwich turned out to be. My entire family devoured this grilled cheese as fast as I could make them.
My husband even asked me for a second one. You cannot go wrong with a spicy buffalo shredded chicken and topped with melted gooey cheese in a toasted sandwich.
I like to serve my grilled cheese with celery and carrot sticks with a side of ranch or blue cheese dressing for dipping. It’s a healthy and fulfilling lunch or dinner.

- Serve with ranch or blue cheese dressing for dipping, optional.
