    Grilled cheese is one of those recipes that never gets old. It's simple comfort food that every child and adult loves. Every time I make a grilled cheese for dinner, I've reminded of how I've grown into my food tastes and loves this year.  (but secretly, as an adult, I want to take off the crusts still!)

    When I was a young child, all I needed for my grilled cheese sandwich was a lot of cheese between two slices of bread. But now...I want all the toppings and I want them all. 

    After all, with a canvas as blank as melted cheese on toasted bread, why not add some different colors, well, flavors in this case, to the mix. Grilled cheese sandwiches are the perfect vehicle for all sorts of amazing tastes and textures. Including bacon

    If I've learned one thing growing up, it's that bacon really does make everything better. This is why I'm pretty much obsessed with the flavor of this Bacon Grilled Cheese sandwich...because it's salty and delicious and crispy, all in one. 

    Grilled Cheese Sandwiches - A Brief History

    Grilled cheese sandwiches have been around in one form or another for centuries. Ancient Roman cookbooks reference combining bread and cheese for dinner, so this is a very old idea. In 1910, the French introduced the Croque Monsieur - which is basically an extra fancy ham and grilled cheese sandwich. 

    The Americanized version of the Croque Monsieur - what we now simply called a grilled cheese sandwich in North America - was invented in the early 1900s not long after the Croque Monsieur. During that time, a young man named James L. Kraft - yes, THAT Kraft - was pushed out of his partner's business.

    He soon began his own cheese wholesale company, and in short order, he realized that the biggest obstacle he faced was spoilage. In 1915, he solved that by creating what has now become Kraft Singles. This cheese could be transported across the country without spoilage. 

    Over time, these simple slices found their way onto toasted bread, and voila. The grilled cheese sandwich was born. 

    Of course, if you know me at all, you know I'm all about real cheese, so you won't find a processed cheese anywhere on my delicious Bacon avocado grilled cheese sandwich, however, you will find delicious, melty goodness along with the crispness of bacon and the cool creaminess of avocado.

    Like any grilled cheese sandwich, this air fried grilled cheese is super easy to make. In fact, you only need five simple ingredients! Although it only takes a few ingredients to make this delicious bacon avocado grilled cheese, you'll find that the flavors are far greater than the sum of their parts.

    What did I tell you? Simple, right? You only need a few ingredients to create one of the tastiest grilled cheese sandwiches you'll ever eat. If you want some more topping ideas we have created a list that will hopefully help you.

    And if you think the ingredient list below is simple, just wait until you make it! 

    • 6 slices bacon, cooked
    • 4 slices bread
    • 2 tablespoon butter, softened
    • 1 cup jack and cheddar cheese, shredded
    • ¼ cup guacamole

    You either have the skill for making grilled cheese, or you don't. I like to think that over the years, I've perfected my grilled cheese making abilities and I'm happy to share some of my cooking tips with all of you. 

    Use Mayo in Place of Butter

    If you're not a fan of using butter on your bread to crisp it up, a good alternative to use is mayonnaise. I know, it's shocking, right? The fat in the mayonnaise browns and crisps just the way that the fat in the butter does. The craziest part is that you can't even tell a difference in the taste.

    Mayonnaise is the perfect spreadable option to put on your bread and creates the perfect golden brown coloring as well. I've actually been using this secret for years and never had an issue with my crust looking too brown or burnt. 

    Spraying Your Air Fryer to Prevent Sticking

    While it's probably not going to happen due to the butter on your bread, you don't want to forget to spray your air fryer basket so that it doesn't stick. You never know when the cheese is going to melt right out of the bread and cause a bit of a sticky (yet delicious) mess. I find that spraying is one of those better safe than sorry things for this recipe.

    The other great part about making grilled cheese is that it's super simple to change up the taste. While I'm a fan of using the same ingredients over and over again, it's fun to change it up now and again, too.

    Just by simply changing the type of cheese you're going to change the entire flavor of your air fryer sandwich as well.     Storing Air Fryer Grilled Cheese

    While I'm confident you'll never ever need to store leftovers when you make this recipe, you should know that you can store them. Grilled cheese can be stored in the refrigerator in an air-tight container for about 2 to 3 days. 

    To reheat the sandwiches wrap them in foil and heat them in a warm oven for 15 to 20 minutes. Only make the oven warm. You're heating the sandwiches through, not cooking them. 

    Be aware that while you can save this in the fridge and reheat them, they won't be nearly as good as they are when they're freshly made.

    • 6 slices bacon, cooked
