The key to this tasty avocado mushroom toast appetizer is ensuring all the flavor gets absorbed into the mushrooms when they're sauteed. It's this cooking step where the olive oil and garlic really come to life, stealing the show in the best possible way.
Then there's a hint of balsamic vinegar that I can't live without. Sure apple cider vinegar works great too, I just prefer a little balsamic vinegar as of late!
Not only are mushrooms amazing at absorbing spices and ingredients, but they hold their texture really well, too. This garlic mushroom avocado toast appetizer is just so good.
However, keep in mind you can cook mushrooms too long and if you do they'll become soggy and shriveled. If you're not careful your skillet full of mushrooms will very quickly become a less-than-impressive pan of fungi.
It'll still have flavor but it won't be the same eating experience. Trust me on this.
Don't worry too much if your mushrooms shrink a bit—the liquid is being cooked out of them so this is expected. However, if they get shrivelled and tiny, you've definitely overdone it.
Can I change up the mushrooms used for this recipe?
You bet. If you prefer the taste of one type of mushrooms then absolutely use those instead. All mushrooms will work in this garlic mushroom avocado toast recipe.
I tend to stick with whatever is in season or on sale because fresh mushrooms do a great job of taking over flavor and always turn out great.
I would recommend steering clear of canned mushrooms for this mushroom avocado toast recipe. If you do use canned mushrooms the flavor will still be there but you'll notice a difference in the texture.
There is also no need to sautee canned mushrooms for any length of time, as they are already cooked. Simply heat the drained, canned mushrooms and add the same ingredients.
In a pinch, canned mushrooms will work. They're just not ideal for best results.
What type of bread works best for this simple avocado and mushroom on toast recipe?
For this appetizer I like using Italian bread or French bread because of the flavor and size. They have that perfect round appetizer shape so I just have to cut into bite-size pieces, top with avocado and mushrooms and serve.
Sourdough bread works beautifully too.
That said, any type of bread will work just fine! For larger slices of bread, spread the avocado first and then cut the bread into cute little appetizer squares. Right before adding the mushrooms on top.
Topping Ideas for Mushroom Avocado Toast
For this easy avocado mushroom toast, minimalism is your friend. I like to top mine with sesame seeds because for me it adds just the right amount of crunch and texture to balance out creamy avocado spread.
You can try different toppings as well as it's totally up to you. Try fresh cilantro, chopped chives, green onions or finely diced onions!

How to Make Garlic Mushroom Avocado Toast
Clean mushrooms, trim and cut in thin slices.
Place olive oil inside a large skillet over medium high heat until it shimmers or a drop of water flicked in it dances. Add the mushrooms. After about 5 minutes, add the garlic, basil and sea salt too.
Simmer until liquid starts to reduce. Cook stirring frequently. Add balsamic vinegar to garlic mushrooms and sauté over medium heat until the liquid is reduced once again. Set aside.
Season with salt and pepper to taste.
In a separate bowl add the peeled and de-pitted avocados. Add the salt and squeeze half a lemon on top. Mash avocado and mix until somewhat smooth and spreadable.
Slice and toast your bread slices until a beautiful golden brown. I usually use a rimmed baking sheet to do this under the broiler, watching closely to avoid the bread burning.
Spread on the avocado mixture and then place the sautéed mushrooms on top.
Sprinkle toasted sesame seeds, if desired, and serve.
Fun Variations for Making Mushroom Avocado Toast
With the mushroom mixture, you can play with different spice options such as soy sauce, and red pepper flakes. Likewise, with the avocado mixture, you can add different ingredients as well such as salsa, crushed tomatoes, etc.

Tips for Making Mushrooms on Toast
Here are a few tips to keep in mind when making this appetizer dish. It's not difficult but you will want to be prepared ahead of time.
- The size of the bread will dictate the size of the individual slices. If serving a lot of people, then use a small diameter long loaf to get more pieces
- Using the lemon in the avocado not only adds taste but prevents the avocado from oxidizing and turning brown
Can you meal prep this ahead of time?
In my opinion, the only thing that I would make ahead of time would be the mushrooms. Once sauteed, they can be quickly reheated when needed.
The fresh avocado spread can discolor, even with lemon juice added.
The bread will become soggy if it's topped with spread and mushroom mixture too early.
Overall, this mushrooms on toast appetizer comes together quick enough that I have never felt the need to make this ahead of time.
