She stumbled on this recipe for Sweet Soy Glazed Mushrooms and Onions somewhere and made her mushrooms and onions like this every time afterwards! These mushrooms and onions are delicious! She also used to say why try and fix something if it is not broken? This became her favorite way to eat mushrooms and onions and it quickly became ours too!

Sweet Soy Glazed Mushrooms and Onions
- 1 pound mushrooms, fresh, sliced
- 1 onion, sliced
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 3 tablespoons olive or another vegetable oil more or less as required
- 1-2 teaspoons sugar - more or less to taste
In a small bowl or cup combine the soy sauce and sugar. Set aside. Heat your oil in a skillet over medium heat. Add the onion, garlic and ginger and cook until the onion is tender, about 3 minutes. Increase heat to medium-high and add the mushrooms. Cook for 3 or 4 minutes. Add the soy sauce and sugar to the skillet. Cook, stirring frequently, until the mushrooms are cooked to your liking, about 5 more minutes.
