Bruschetta with Cheese
Years ago I was introduced to these mini bruschetta bites and I have been making it ever since. I have made these Crispy Cheesy Bruschetta Bites as a small meal while watching a sporting event and as a start to a wonderful, food filled evening!
I hate it when you have company over and you spend all of your time in the kitchen. This cocktail party bread appetizer solves this problem!
If you take a moment to get the bruschetta mixture ready beforehand, basically all you have to do is slice your baguette, add the bruschetta mixture, some cheese and bake! More time to enjoy company and eat!
Our Easy Tomato Bruschetta is perfect to use instead of store bought. I urge you to try making bruschetta yourself at least once as the difference is incredible.
The only thing that takes time to do is chop the tomatoes you are using. Then you add a few ingredients, stir until blended, place on your baguette slices and bake.
This recipe is so super simple and if you are a tomato fan this recipe MUST be on your bucket list. I’m not even kidding.
That being said, if you need to, buy some, this recipe will still turn out great!
Mini Bruschetta Bites
This Italian bruschetta recipe with cheese is definitely droolworthy. Just the way everything blends together. These mini bruschetta bites are super addictive too. So difficult to stop at one, or two.
Store bought bruschetta or homemade will work with this super easy recipe. If you are like me and have lots of tomatoes to use up in the summer, I hope you will try making your own bruschetta.
The only step that takes time is preparing and chopping the tomatoes. Otherwise it tastes so much better than store bought and should be tried at least once.
Otherwise there are some terrific brands of bruschetta out there that only require you to open the lid! No chopping at all! Sometimes that is definitely the best route to go.
Bruschetta with Mozzarella
These Crispy Cheesy Bruschetta Bites are perfect! Put on as much or as little cheese on top as you desire. For me I always figure the more cheese the better!
I love cheesy appetizers like this. My only complaint is that I can’t stop at only one as they are so addictive!
Frequently, I use mozzarella and parmesan cheeses to make this wonderful snack or appetizer but most cheeses will work and work well.
Swap in a Monterey Jack or Colby Jack, cheddar, or an Italian or Mexican blend of cheese. I could go on and on.
If you want to try and experiment with different cheeses, besides or in combination with mozzarella, I urge you to try it. I have added little ends of different cheeses and have been pleasantly surprised at the results.
Maybe that will happen to you too.

Ingredients for Bruschetta with Mozzarella
- mayo
- mozzarella cheese
- parmesan cheese
- bruschetta
- pepper
- crusty bread or baguette
How do you make Crispy Cheesy Bruschetta Bites?
Combine ingredients in bowl.
Slice baguette into 3/4 inch slices.
Prepare rimmed baking sheet with parchment paper.
Place bread slices and top with Bruschetta mixture.
Bake at 350 degrees for 12-15 minutes

- 1/2 cup mayonnaise
- 1 cup mozzarella cheese, shredded
- 1 1/2 cups Bruschetta or our Easy Tomato Bruschetta
- 1/4 cup Parmesan cheese, grated or shredded
- 1 teaspoon Pepper
For serving
- Baguette, crackers, chips, scoops, pitas or bread
Instructions

What is the purpose of the mayo?

Do you have a recipe for the Bruschetta?
Sorry for the delay in responding to you. We have tried the recipe a couple more times and simply seeded and diced 2 medium sized tomatoes. We added 1/2 teaspoon of basil and 1 teaspoon of oregano to the tomato mixture. If you are unable to find a small container of bruschetta at your local grocery store this tastes delicious also!
