Buffalo Chicken Grilled Cheese
Buffalo Chicken Grilled Cheese Sandwiches are crispy on the outside and filled with spicy flavor and gooey cheese. A great lunch or dinner.

- 2 cups shredded rotisserie chicken
- 4 ounces cream cheese softened
- 2-4 tablespoons buffalo sauce to taste
- 8 slices brioche sandwich bread
- 4 tablespoons unsalted butter very soft
- 2 cups shredded Monterey Jack cheese
- cooking spray
Get out and measure all of your ingredients.
Place the chicken, cream cheese, and buffalo sauce in a medium-sized bowl.
Mix it all together until combined. You can do with this an electric hand mixer or a fork.
Skillet
Place a large skillet over medium heat. Smear ½ tablespoon of the butter on one slice of the bread on one side. Place the bread butter side down into the skillet.
Top with ¼ of the chicken mixture.
Then ¼ of the cheese.
Butter another piece of bread on one side. Place the bread butter side up onto the sandwich.
Place a lid on the skillet and cook for about 2-3 minutes on the first side until golden brown. Press down on the top of the grilled cheese to kind of glue the whole sandwich together. Flip the sandwich, cover again and continue to cook another 2-3 minutes until golden brown on the bottom and the cheese is melted in the center.
I can normally fit two sandwiches in the pan at once, so you will need to cook in batches.
Air Fryer
Build sandwich inside air fryer basket or tray that is lightly coated in cooking spray.
Set temperature to 370 degrees for 10 minutes.
Flip your grilled cheese at the 6 minute mark.
My husband prefers his grilled cheese darker and always adds another minute or two. Check yours to make sure it's the color you desire before removing from air fryer.
Serve with ranch or blue cheese dressing for dipping, optional.

- Use any sandwich bread you like, I just prefer brioche and it gives an extra decadence to the sandwich.
- I used a more mild cheese to really let the buffalo stand out more. Use any good melting cheese you prefer.
- 2 tablespoons of buffalo sauce is a light amount with just a hint of spice in the sandwich. If you like more, add more. You can taste the chicken mixture before cooking the sandwiches to see if you want more spice since everything is cooked. The photos show 2 tablespoons of buffalo sauce used.
