Oven Grilled Cheese Recipe

Ingredients

  • 4 cups sharp cheddar cheese shredded, or mild
  • 2 cups Monterey Jack cheese shredded, gouda, Colby Jack
  • 16 slices thick cut sandwich bread Thick-cut white bread, sourdough, or Texas toast or your favorite
  • ½ cup butter, melted or 1 stick

Instructions

  • Preheat oven to 450 degrees F and adjust oven racks to middle and lower-middle positions.
  • Place 1 baking sheet on each rack and allow sheets to heat up while you prepare your sandwiches.
  • Combine the cheeses in a large bowl.
  • Butter one side of each bread slice, then place 8 slices butter-side down. Top each with about ½ cup of the cheese mixture, then add the remaining bread slices with the buttered side facing up. Press gently to compact the sandwiches.
  • Carefully remove the hot baking sheets from the oven and place them on a cooling rack. Arrange the sandwiches on one baking sheet, using parchment paper if needed.
  • Return the baking sheet to the center oven rack and carefully place the second hot baking sheet on top of the sandwiches, rim-side up. Bake for 5 to 6 minutes, or until the bread is golden brown and the cheese is melted.
  • Remove the top baking sheet and transfer the sandwiches to a cooling rack. Let them cool for a minute or two, then slice in half if desired and serve immediately.
