    This grilled cheese and egg sandwich is a hearty grilled cheese recipe that's easy to make and the perfect dish for a quick breakfast, lunch, or snack.

    I love anything that combines cheese and eggs, which is why this grilled cheese is one of my favorite variations to make. The fried egg and melted cheese along with the toasted bread make a delicious, handheld feast.

    Top Tip:

    Always cook your grilled cheese over medium-low heat so the cheese has time to melt and the bread toasts rather than burns.

    Ingredients

    You'll only need a few simple ingredients to make these sandwiches.

    • Bread
    • Butter
    • Eggs
    • Cheese slices

    Substitutions and Variations

    • Bread - Use your favorite kind of bread as long as slices are similar in size.
    • Butter - Use oil or mayo instead.
    • Eggs - Scramble or make a mini omelet to go inside each sandwich and think of all of the ingredients you could also include with your omelet.
    • Cheese Slices - Your favorite variety or a combination of cheeses.
    • Extra Slice - Cheese lovers add another slice to the other side of the sandwich so your fried eggs are surrounded with cheese.
    • Spicy - Add a sprinkling of chili pepper flakes or cayenne pepper while cooking to imbue heat into the sandwich.
    • Add Meat - Add a slice of ham or some cooked bacon for a nice change.

    Instructions

    This is an incredibly simple breakfast sandwich recipe to make - like any good grilled cheese fried egg sandwich recipe should be! The highlights are below, but you'll find the complete instructions in the recipe card.

    1: Fry the eggs sunny side up or over easy and add salt and pepper as desired.

    2: Butter the pieces of bread. Place the slices of bread butter side down in the pan. Cover each slice with cheese and cook until golden brown.

    3: Place the eggs on top of each slice of bread and cheese, top with buttered bread, and flip the sandwiches over, cooking until the cheese melts and other side is golden brown.

    Storage

    Refrigerator: Store tightly wrapped in parchment paper for up to 3 days.

    Freezer: Open air freeze the sandwiches on a baking sheet until hard. Then, place in an air-tight, freezer-safe container for up to 2 months.

    Reheat: A grilled cheese toaster is the easiest way to reheat these sandwiches perfectly. You can also use reusable toaster bags for grilled cheese sandwiches to reheat these grilled cheese and egg sandwiches.

    What to Serve with Grilled Cheese

    There are so many delicious options when it comes to grilled cheese pairings. Rather than making a list that you'll be reading all day, I'll just let you check out our favorite grilled cheese sides!

    Tips

    • Always cook your grilled cheese sandwiches on medium-low heat. This allows the cheese to fully melt at just the same time as the bread gets toasty.
    • Use just enough butter to coat your bread. Too much butter can make the sandwiches greasy and soggy.
    • To remove your eggs without breaking the yolk, angle the handle of your spatula up so the head of the spatula is on an upward angle with the tip against the pan. Then, give a swift forward motion, sliding the spatula under the egg.

    FAQ

    Can I use shredded cheese for grilled cheese sandwiches?

    You can for skillet grilled cheese. It will work out just fine. Just shred the cheese yourself for best results.

    Why are my grilled cheese sandwiches soggy?

    If your grilled cheese golden on the outside but soggy in the middle, it means you likely need thicker bread, ideally between ¾ and 1 inch thick.

    Why did my bread get burned before my cheese fully melted?

    You cooked the sandwiches over heat that was too high. The heat overcooked the bread without giving the cheese time to melt.

    Ingredients
      

    • 4 slices bread I used Oat Nut
    • 2 tablespoon butter softened
    • 4 large eggs
    • Salt and pepper
    • Cheese slices enough to cover two slices of bread

    Instructions
     

    • Heat a skillet over medium-low heat.
    • Spray skillet with cooking spray and crack eggs into it.
    • Salt and pepper according to your preference.
    • Cook until the whites are set and the yolks are still runny. This will take about 5 minutes.
    • Remove eggs from pan.
    • Butter one side of each slice of bread.
    • Place two slices of bread, butter-side down, in your heated skillet.
    • Cover each piece with cheese.
    • Allow to cook on medium-low heat for 3-5 minutes or until the cheese is melted and the bread is golden brown.
    • Place two fried eggs on top of each sandwich, followed by a slice of bread, butter-side up.
    • Flip the sandwiches and continue cooking for 3-5 minutes or until the other slice of bread is golden brown.
    • Cut in half and serve.
