This is an incredibly simple breakfast sandwich recipe to make - like any good grilled cheese fried egg sandwich recipe should be! The highlights are below, but you'll find the complete instructions in the recipe card.


1: Fry the eggs sunny side up or over easy and add salt and pepper as desired.


2: Butter the pieces of bread. Place the slices of bread butter side down in the pan. Cover each slice with cheese and cook until golden brown.


3: Place the eggs on top of each slice of bread and cheese, top with buttered bread, and flip the sandwiches over, cooking until the cheese melts and other side is golden brown.

4: Cut in half and enjoy!

Grilled Cheese and Egg Sandwich
Ingredients
- 4 slices bread I used Oat Nut
- 2 tablespoon butter softened
- 4 large eggs
- Salt and pepper
- Cheese slices enough to cover two slices of bread
Instructions
- Heat a skillet over medium-low heat.
- Spray skillet with cooking spray and crack eggs into it.
- Salt and pepper according to your preference.
- Cook until the whites are set and the yolks are still runny. This will take about 5 minutes.
- Remove eggs from pan.
- Butter one side of each slice of bread.
- Place two slices of bread, butter-side down, in your heated skillet.
- Cover each piece with cheese.
- Allow to cook on medium-low heat for 3-5 minutes or until the cheese is melted and the bread is golden brown.
- Place two fried eggs on top of each sandwich, followed by a slice of bread, butter-side up.
- Flip the sandwiches and continue cooking for 3-5 minutes or until the other slice of bread is golden brown.
- Cut in half and serve.
