- 4 slices bread I used Oat Nut
- 2 tablespoon butter softened
- 4 large eggs
- Salt and pepper
- Cheese slices enough to cover two slices of bread

Heat a skillet over medium-low heat.
Spray skillet with cooking spray and crack eggs into it.
Salt and pepper according to your preference.
Cook until the whites are set and the yolks are still runny. This will take about 5 minutes.
Remove eggs from pan.
Butter one side of each slice of bread.
Place two slices of bread, butter-side down, in your heated skillet.
Cover each piece with cheese.
Allow to cook on medium-low heat for 3-5 minutes or until the cheese is melted and the bread is golden brown.
Place two fried eggs on top of each sandwich, followed by a slice of bread, butter-side up.
Flip the sandwiches and continue cooking for 3-5 minutes or until the other slice of bread is golden brown.
Cut in half and serve.
- Always cook your grilled cheese sandwiches on medium-low heat. This allows the cheese to fully melt at just the same time as the bread gets toasty.
- Use just enough butter to coat your bread. Too much butter can make the sandwiches greasy and soggy.
- To remove your eggs without breaking the yolk, angle the handle of your spatula up so the head of the spatula is on an upward angle with the tip against the pan. Then, give a swift forward motion, sliding the spatula under the egg.
