Cheesy Bacon Potato Bites are amazing! Potatoes, cheese and bacon are a perfect combination and this recipe can be used as a snack, side or appetizer!
We usually grab some sour cream, a flavored sour cream or ranch dressing for dipping! I can’t stop eating these Cheesy Bacon Potato Bites once I get started! They are so addictive!
I always prefer, as my first choice, to dip these Cheesy Bacon Potato Bites in an onion flavored sour cream based dip and a nice ranch dip or dressing is my close second! My husband prefers plain old sour cream! I can’t wait to hear what you think tastes best with these delicious bites!
It’s funny. I love baking potatoes with olive oil or egg whites coating the outside skin and I always sprinkle a little salt and pepper all over the outside too.
I always use a salt shaker or truthfully, prefer to grind a little salt and pepper all over the outside of the skin. With the shakers I sometimes put too much salt or pepper in one spot and none in another.
The grinders seem to spread the salt and pepper out a little better for me personally and you don’t want to use too much salt and pepper, just a light coating on the outside of your potato.
You also have the option of just washing your potatoes and baking them just like that! I highly recommend trying to make a baked potato with the oil or egg whites all over the skin at least once! Salt, pepper and any of your favorite seasonings will work beautifully sprinkled lightly on the outside of each potato! Just a suggestion for every potato lovers bucket list!
Once the potatoes are baked all you have to do is smother the potatoes with cheese and some cooked and crumbled bacon! Bake or broil for a few more minutes and you will have a fabulous dish ready to eat!
Cheesy Bacon Potato Bites
- 2-3 medium-large russet potatoes, unpeeled
- 2 tblsp kosher salt - optional
- 1 tsp pepper -
- 1 tblsp rosemary optional
- 1 tblsp thyme optional
- egg white or olive oil - optional
- cooking spray
- 2 cups cheese, shredded to taste
- 6-8 strips bacon, cooked and crumbled
- green onion. thinly sliced optional
- ranch dressing or, sour cream for dipping
Preheat oven to 400 degrees. Pierce potatoes with a fork.
This next step is optional. Whisk an egg white until frothy or use olive oil and brush the outsides of the potatoes. I usually sprinkle kosher salt, pepper, rosemary and thyme on a cutting board and roll the coated potatoes around. You can just use olive oil or nothing on your potatoes prior to baking. The end result will still be delicious!
Bake potatoes for about 60 minutes, until tender. Cooking time will vary depending on the size of your potatoes. Allow to cool slightly. Slice with a sharp knife into 1/4 - 1/2 inch rounds and place on a well-greased tinfoil lined baking sheet. Next put on the shredded cheese and bacon pieces. Pile cheese and bacon pieces in the middle of the potato. The cheese, as it melts, has a tendency to spread. Bake 10-12 minutes. Broil until cheese browns. Remove from oven, allow to cool a few minutes, and serve with ranch dressing or sour cream. Enjoy!
