    This is by far the easiest and best Jalapeno Creamed Corn recipe that I’ve ever made. It’s the perfect balance between sweet, salty, and spicy. I love making this as a side dish to accompany any meal. It pairs great with anything! Since it’s a subtle eat, even picky kids will enjoy it.

    The savory pieces of bacon with the cheesy corn are the best bite. Jalapenos have a reasonable amount of heat and delicious flavor, while the cream cheese and sweet corn tame it wonderfully so it doesn’t overwhelm the other ingredients.

    • Easy to make: This is essentially a dump recipe — place all the ingredients in the slow cooker and that’s it!

    Ingredients

    This recipe uses simple ingredients but the result is an incredible spicy creamed corn that you will want to remake often. It’s also easy on the wallet, too. You can cook for the family without spending a fortune!

    • Frozen corn: Any brand of frozen corn is great. You may even use fresh corn if it's in season. It will take about 6-7 ears of corn to make this recipe.
    • Cream cheese: The tangy and cheesy flavor of this spicy corn comes from the cream cheese. Which paired with the jalapeno reminds me of a jalapeno popper.
    • Heavy cream: I like to use cream in this recipe for the right consistency and it also keeps you from having to make a slurry later.
    • Bacon: You may cook the bacon ahead of time or right before you make the creamed corn. Any variety of pork bacon is fine. I love hickory and applewood smoked the best.
    • Green onions: This is the perfect garnish! It adds a slightly crunchy texture and a sweet onion flavor.
    • Jalapenos: I use diced fresh jalapenos. Ensure that the pieces are diced small. It is meant to be well distributed in small pieces throughout the corn mixture.
    • Cheese: I use a combination of Colby jack, which has a mild flavor and melts well, and parmesan, which is a little sharper and saltier. It’s a good contrast. You may also use cheddar instead of Colby if you like.

    Variations

    • Garlic and Chive: Add fresh minced garlic to the creamed corn and garnish it with fresh chives.
    • Maple and Ham: Use chopped ham instead of bacon and drizzle in pure maple syrup for extra sweetness.
    • Spinach and Mushroom: Add some fresh veggies like spinach and chopped mushrooms for earthiness and a veggie boost.
    • Smoked jalapeno: Make smoked jalapeno creamed corn by adding chipotle peppers or smoking fresh jalapenos before you add them to the crock pot.

    How to Make Jalapeno Creamed Corn

    In only three steps you will have deliciously spicy creamed corn. The prep work is quick but waiting is the longest part. It will make your kitchen smell so good, though!

    Step 1: Add the ingredients to the slow cooker. Combine the corn, cheeses, cream, seasonings, bacon, and jalapenos in the crock pot.

    Step 2: Stir and cook. Stir until well mixed. Cover the pot and cook the jalapeno corn for 4 hours at low heat.

    Step 3: Garnish and serve. Top the finished corn with the chopped green onions and enjoy.

    Hint: Stir the creamed corn once every 1-2 hours to ensure that all of the ingredients are well mixed and cook evenly.

    Storage Directions 

    • Refrigeration: Store leftover corn in an airtight container for up to 5 days in the refrigerator.
    • Freezing: Place the cooled cream corn in a freezer-safe bag. Gently press it closed and flatten the bag, trying to remove as much air as possible. Thaw in the refrigerator overnight before you reheat it.
    • Reheating: You may reheat leftovers in the microwave or a saucepan on the stovetop over low heat.
    • Make Ahead: Prepare the spicy creamed corn and store in a container in the refrigerator for up to 24 hours before you cook it. Transfer it to the slow cooker and cook, adding a little bit to the cooking time (about 30 minutes or so) to ensure it is completely heated through.

    Serving Suggestions

    Recipe Tips

    • Keep or omit the jalapeno seeds: Control the heat level by leaving in the jalapeno seeds for more kick or taking them out to tame the spice.
    • Try bacon bits: If you don't want to cook bacon, use store-bought bacon bits as a shortcut. I recommend waiting to add them until the last hour of cooking so they don’t dry out.
    • Add sugar: If you want to add a little more sweetness, try 1-2 teaspoons of sugar, honey, or maple syrup.

    Can I make this jalapeno corn on the stovetop?

    Yes! Add all the ingredients to a large pot and cook over medium heat. Stir until all of the cheeses are melted. Simmer on low until the dish is warmed through and the flavors come together. You may also saute the diced jalapeno first for more flavor.

    Can I use canned corn?

    Sure. Ensure that you drain all the liquid from the cans before adding it to the crock pot.

    Why is my creamed corn so thick?

    The cream cheese thickens the creamed corn quite a bit. Add a splash of milk to thin it out to the consistency of your liking.

    Ingredients
      

    • 5 cups frozen corn
    • 8 ounces cream cheese
    • 1 cup heavy cream
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • 1 cup cooked chopped bacon about 1 pound raw
    • 2 green onions sliced
    • 2 jalapenos diced or sliced (the more seeds added, the spicier the corn will be)
    • 1 cup shredded cheese I used Colby Jack
    • ½ cup parmesan cheese

    • Combine all ingredients except green onions in your crock pot.
    • Cover and cook on LOW for 4 hours. Stir occasionally.
    • Garnish with sliced green onions.
