The toasted coconut takes this recipe over the edge! It adds a crispy texture, depth of flavor, and a pretty golden brown color. This is another way it reminds you of the Girl Scout cookies. I promise with the gooey marshmallow you won't miss the caramel.

Another absolutely wonderful rice krispie recipe that you can make for the winter holidays is this Christmas Rice Krispie treats. Guaranteed to impress both family and friends!

    Why You'll Love This Recipe

    • It's great to make ahead: I love to make these Rice Krispies treats in advance since they need time to set. Then, they are ready when I want to serve them, and I don't have to wait for them.
    • It's a family favorite: If you serve this to your family, I promise they will love the recipe. They are simple to make, but the presentation is lovely and looks complex.
    • It's inexpensive: The ingredients used are minimal and great for a tight budget. You can make amazing things without spending a lot!

    Ingredients

Everything you need is super easy to find at any local grocery store. Below are the essential components needed to make the best coconut Rice Krispie treats.

Ingredients for samoa rice krispie treat in bowls on a table.
    • Butter: I use salted butter to offset the sweetness of the marshmallows and chocolate. It will be melted, so don't worry about softening it first.
    • Marshmallows: Mini marshmallows are the way to go because they melt more easily and evenly. If you only have regular ones, they will be fine in a pinch.
    • Rice Krispies cereal: I like the classic Rice Krispies brand, but any brand of crispy rice cereal will work the same in this recipe.
    • Coconut flakes: You may purchase them pre-toasted or toast them yourself; it's up to you! I love the toasted flavor because it copies the Girl Scout cookies.
    • Chocolate chips: I use semi-sweet chocolate chips because they provide the perfect amount of richness without being too sweet. Milk and dark chocolate work great as well.

See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.

    Variations

    • White chocolate: Swap the semi-sweet chocolate chips for white chocolate chips for an extra sweet version.
    • Add nuts: Sprinkle chopped pecans or walnuts on top or fold them into the treats.
    • Add caramel: Drizzle your favorite caramel sauce or dulce de leche over the coconut Rice Krispie treats.
    • Use Cocoa Krispies: Make this recipe with Cocoa Krispies instead of the original Rice Krispies cereal to add extra chocolatey flavor.

I think you're going to want to try my peanut butter Oreo Rice Krispie treats if you enjoy recipes like this as much as I do.

How to Make Toasted Coconut Rice Krispie Treats

Here are all the steps you'll need to prepare these Samoas Rice Krispie treats with marshmallows. Once the components are mixed and spread into the pan, they need to be set before you can devour them.

    Mini marshmallows in a saucepan.

Step 1: Melt butter and marshmallows. Add the butter and mini marshmallows to a saucepan over medium-high heat.

Rice Krispies and coconut flakes mixed in a saucepan.

Step 2: Add cereal and coconut flakes. Fold in the Rice Krispies and 1 cup of coconut flakes until fully coated.

Chocolate chips added to the cereal mixture.

Step 3: Transfer half and add the chocolate. Pour half of the cereal mixture into the baking dish and press it down evenly. Add the chocolate chips to the other half of the cereal mixture and stir until the chocolate is melted and coats the cereal.

Step 4: Finish assembly. Add the chocolate cereal mixture on top and gently press it down. Sprinkle the remaining toasted coconut on top of the treats.

Chilled slices of the krispie treats with coconut on top.

Step 5: Chill and slice the treats. Pop the pan into the fridge for about 30 minutes for all the ingredients to set. Then, slice it into 12 squares.

Step 6: Serve. Carefully remove them from the pan and enjoy!

    Recipe Tips

    • Use sweetened or unsweetened coconut: Make these treats with sweetened or unsweetened coconut, based on your preference. This will depend on how sweet you want them to be.
    • Don't skip the toasting step: Unless you purchase toasted coconut flakes, you'll need to toast them yourself in the oven. It takes about 10 minutes in a 350-degree oven.
    • Use parchment paper: To make removing your treats from the pan even easier, use parchment paper. Lay pieces both ways so you can lift them out once they're fully set.

    Storage Directions

    • Storing: Store the Rice Krispies treats in an airtight container at room temperature in the refrigerator for up to 5 days. Freeze them for up to 3 months.
    • Make Ahead: I like to prepare them 1-2 days in advance, especially if I plan to serve them for a specific occasion.

    Serving Suggestions

    • Enjoy a scoop of ice cream on the side or make a unique ice cream sandwich. dark chocolate ice cream without eggs and Kit Kat ice cream pair well with the Samoa flavor.
    • Keep it simple and have a cold glass of milk.
    • A hot beverage like McDonald's caramel mocha would be a good accompaniment to match the chocolate flavors.
    • Make a tasty spread of treats and include peanut butter Oreos and ranch snack mix, too.

    Recipe FAQs

    Can I use unsalted butter?

Sure, but I recommend adding a pinch of salt if you do. It really helps balance the sweetness of the other ingredients.

Why are the slices so messy?

If you cut the Rice Krispies treats while they're still warm, the chocolate will make a huge mess. Give them plenty of time to set first!

    Can I use chocolate bars?

Yes, but I would use any sort of baking chocolate as they are better for melting than a Hershey's bar.

These were a huge hit today for our snack table after church! Received many compliments on them. Only thing I added was 1/2 c melted chocolate chips on top of the chocolate krispie layer to get the toasted coconut to adhere. Will certainly be making again!
