Why You'll Love This Recipe
- It has great texture: These are not your average cookies. They are soft and chewy like a chocolate chip cookie, with crispy bits of cereal throughout for an amazing textural contrast. It comes through in every bite!
- It's easy to make: It's a simple recipe, too. If you've made homemade cookies before, you can definitely make these Rice Krispies chocolate chip cookies with ease.
- It's budget-friendly: I typically have many of these ingredients always stocked in my kitchen. Butter, sugar, eggs, flour, etc., are common staples. I find that I don't spend much at all to get the last couple of things for these cookies.
Ingredients
Important ingredients for making this recipe are highlighted below. It's a basic and delicious chocolate chip cookie dough with the addition of crispy rice cereal, so no surprises here!

- Butter: Your butter must be softened before you get started. This allows it to mix best with both sugars and to get soft and chewy cookies. I use salted butter for this, but add a pinch of salt if you only have unsalted.
- Sugar: A combination of white granulated sugar and brown sugar makes for the best cookie possible. You get golden, crisp edges, while the center remains chewy. It's absolute perfection!
- Baking powder/soda: This cookie needs a combination of baking powder and baking soda to achieve the right texture. Baking soda helps the cookie to spread, while the baking powder helps it to rise a little.
- Rice cereal: I use Rice Krispies brand, but any brand of plain rice cereal will work just fine.
- Chocolate chips: Semi-sweet chocolate creates the perfect balance of sweet and bitter to make a tasty bite. Feel free to use milk chocolate if you prefer.
See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.
Variations
- White chocolate: Swap the chocolate chips with white chocolate chips to add more richness as well as a different flavor profile.
- Coconut: Fold in sweetened coconut flakes for a tropical flavor and crunchier texture.
- Mint: Swap the chips or half of the chips for crushed Andes mints to create delightful chocolate mint cookies.
How to Make Chocolate Chip Rice Krispie Cookies
Here are the steps you'll need to make the best chocolate chip cookies with Rice Krispies. Preheat your oven to 350°F and spray a cookie sheet with nonstick cooking spray.

Step 1: Cream the butter and sugar. Add the softened butter and both sugars to a mixing bowl. Beat the mixture for about 2 minutes with an electric mixer, or until smooth and fluffy.

Step 2: Add egg and vanilla. Beat in the egg and vanilla extract until they are just combined with the butter mixture.

Step 3: Stir in dry ingredients. Next, gently stir in the baking powder, baking soda, and flour until they're fully incorporated with no dry patches.

Step 4: Fold in cereal and chocolate. Then, fold in the rice cereal and chocolate chips so they're well distributed throughout the cookie dough.

Step 5: Form the cookies. Scoop the dough onto the greased baking sheet, leaving about 2 inches in between each cookie.

Step 6: Bake them. Stick the pan into the oven and bake the cookies for around 12 minutes.
Recipe Tips
- Use room temperature ingredients: When making the cookie dough, room temperature ingredients always work best. This is the same for the butter AND even the egg. It makes the cookie dough smoother and free of lumps.
- Try a cookie scoop: To make uniform cookies, try a cookie scoop. It ensures that they will all be the same size and bake at the same rate. It's one of my favorite cookie-making tools.
- Don't overmix it: Only mix the ingredients until they are just combined. If you overmix the dough, it will affect the baking soda and baking powder, resulting in flatter and denser chocolate chip cookies.

Recipe FAQs
Nope! You can mix, scoop, and bake immediately! If you want to stick it in the refrigerator for a bit, that's fine. However, it's not required.
If you add too much flour or overbake the Rice Krispie cookies, that can make them dry and crumbly. To prevent dry cookies, measure your ingredients correctly and make sure to keep an eye on them as they bake.
If your butter was too warm, this can cause the cookies to spread and become flat in the oven. It must be softened, but still cool when you work on the cookie dough.
