- Butter: I prefer unsalted butter in this recipe as it gives you more control over the salt flavor.
- Caramel bits: I highly recommend that you use Kraft caramel bits if you can find them. They have the perfect flavor that mimics the Little Debbie Star Crunch cookies.
- Chocolate chips: I love the rich chocolate flavor of the milk chocolate. However, you can also use semi-sweet chocolate chips if you like.
- Milk: For this star crunch recipe, I add some whole milk to make the melted chocolate mixture nice and creamy.
- Marshmallows: You can use mini or regular-sized marshmallows. The mini will melt a little bit faster.
- Rice Krispies: Whether you use name-brand Rice Krispies is up to you. I don’t notice a difference in flavor with the store brands.

How to Make Star Crunch Cookies
Before you get started, cover a large baking sheet with parchment and grab a large pot. There is no baking in this recipe but having your pan ready for the star crunch mixture will make the process a breeze.
Step 1: Combine the ingredients. Combine butter, caramel bits, milk, and chocolate chips in a large pot.
Step 2: Melting the chocolate. Heat it over low heat until fully melted.
Step 3: Add the marshmallows. Stir in the marshmallows and heat until they are melted.
Step 4: Adding the cereal. Remove the chocolate and marshmallow mixture from the heat. Add the Rice Krispies and stir until well combined and the cereal is evenly coated.
Step 5: Scoop the cookies. Drop 3 tablespoons of the star crunch mixture and gently flatten. Repeat the process until all the cookies are made.

Star Crunch Cookies
Ingredients
- ½ cup unsalted butter or 1 stick
- 2 cups Kraft caramel bits
- 2 cups milk chocolate chips
- ⅓ cup whole milk
- 11 ounces marshmallows
- 8 cups Rice Krispies cereal
Instructions
- In a large stock pot on low heat, heat butter, caramel bits, chocolate chips and milk until all melted. It is easier to push down on the caramel bits as they get soft to help them to melt quicker (note: this step might take about 10-15 minutes, but you want to go slow, so it does not burn).
- Add marshmallows and stir constantly until melted, then remove mixture from heat and add in Rice Krispies. Mix quickly before it gets too cool, but ensure it is well incorporated.
- Cover a cookie sheet with parchment paper or foil and lightly grease. Drop a heaping 3 tablespoon scoops, then lightly flatten (note: use a small piece of parchment paper or a measuring cup to flatten once very slightly cooled so they have less chance to stick).
- Allow them to fully cool and set for about an hour then enjoy!
