The Best Mini Blueberry Muffins
These Mini Blueberry Muffins are so yummy! We usually use store bought pureed applesauce instead of as much vegetable oil to make these muffins and they turn out perfect every time. Whether you make the muffins big or small, this recipe is one you will make over and over again!
- 1 1/2 cups all-purpose flour
- 3/4 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1/3 cup applesauce
- 1/3 cup vegetable oil
- 1/3 cup milk
- 1 cup blueberries, fresh
- 1/4 cup brown sugar
- 3 tablespoons all-purpose flour
- 2 tablespoons butter, cubed
- 1 teaspoon cinnamon, ground more or less to taste

Preheat your oven to 400 degrees. Prepare your muffin pan with cooking spray. Set aside. Combine flour, sugar, salt and baking powder. Place vegetable oil and applesauce into a small bowl. Add the milk and egg. Stir until blended using a handheld mixer. Combine with flour mixture. Gently fold in blueberries using a spoon. Fill muffin cups right to the top edge. Next you must prepare the topping.
Combine sugar, flour, butter, and cinnamon. Mix with a fork or your fingers, and sprinkle over muffins before baking. Bake for 20 to 25 minutes or until lightly browned. Enjoy!
