    These Popcorn Bars are both creative AND delicious! Every ingredient works together to create the most memorable bite. I love the crunchiness of the popcorn and rice cereal the most. Combined with the bits of toffee and melted chocolate, my mouth is watering!

    These make the perfect indulgent snack. You don't even need a reason or a special event to prepare these popcorn treat bars. I make them often just to enjoy after a tasty dinner or as a treat when I have a chocolate craving. It's one of my top choices to have on hand almost all the time, too!

    These are the 4 ingredients you'll need to make these crispy popcorn treats. They are common items you may even have already!

    • Popcorn: I use regular buttered microwave popcorn. You can use any variety of popcorn that you like.
    • Rice Krispies: Similar to other Rice Krispies treats, these popcorn crunch bars don't need name-brand rice cereal. Use any kind you want!
    • Chocolate chips: I like semi-sweet chocolate chips because they're not too sweet, but you can use dark or milk chocolate instead.
    • Toffee bits: These add a subtle saltiness and texture to the bars. You can find these in the baking aisle next to the chocolate chips.

    Variations

    • Marshmallow addition: Swap some or all of the chocolate for marshmallow fluff to make the bars chewier.
    • White chocolate swap: Use white chocolate chips instead of semi-sweet so they're extra rich.
    • Add nuts and candy: Fold in chopped nuts like pecans and M&Ms for more texture and fun colors.

    How to Make Popcorn Bars

    Here are the instructions needed to make these homemade popcorn bars. Pop your popcorn and melt the chocolate before you get started!

    Step 1: Combine the ingredients. Mix the popped popcorn with the melted chocolate, rice cereal, and toffee bits.

    Step 2: Transfer it to the pan. Once it's all fully coated, transfer it all to the 9x13 pan, spread it evenly, and press it down.

    Step 3: Chill and slice. Stick the pan in the fridge for the dessert to cool and set for about 30 minutes. Then, slice it into 12 squares.

    Recipe Tips

    • Sit at room temperature before slicing: Allow the bars to sit at room temperature for about 5 minutes to make them easy to slice. They will harden a bit in the refrigerator.
    • Line the pan with parchment: Line the pan with parchment paper and let the extra hang over the edges to make it easier to lift from the pan.
    • Sift out unpopped kernels: I like to remove all of the unpopped kernels before I work on thisrecipe. No one wants to bite into one, and there are always a few when you microwave popcorn.
    • Storing: Store them in an airtight container in the refrigerator for up to 3 days. Freeze them for up to 1 month, just keep in mind that the popcorn may become soft as it thaws.

    Serving Suggestions

    • Make a totally unique ice cream sandwich using fun homemade flavors like sprinkles ice cream or brownie ice cream with caramel.
    • Add nuts for extra crunch. Try this candied walnuts or spicy candied pecans.

    Why did the toffee bits melt?

    If you add them too soon, the warm chocolate will melt the toffee bits. Let it cool slightly before you stir them in.

    Can I use stovetop popped popcorn?

    Yes! Any popped popcorn would work just fine in this recipe.

    How can I keep the mixture from sticking to my hands?

    Spray your hands with cooking spray or use a little vegetable oil to keep the mixture from sticking to your hands and making a mess.
