Ingredients
This is everything I use to make this recipe for no-bake chocolate oatmeal cookies. They're s'mores-inspired, so there are graham crackers and marshmallows as well.

- Peanut Butter: I use creamy peanut butter for this recipe because I enjoy the smooth texture best. I like to experience the texture of the oats and graham crackers.
- Chocolate chips: Semi-sweet chocolate chips are my favorite because they aren't as sweet as milk chocolate, but they aren't as bitter as dark chocolate.
- Oats: I use old-fashioned oats because they give the best texture. Don't try to substitute something like instant oatmeal because it won't give the same result.
- Graham crackers: This helps to give the oatmeal chocolate no-bake cookies a s'mores flavor. They are crushed and mixed inside the cookies and coated in the chocolate mixture. But they provide crunch and a subtle honey flavor.
- Marshmallows: These are added right at the end and then melted on top. The gooey marshmallow, combined with the melted chocolate and other components, takes the recipe over the top.
See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.
Variations
- Nutella: Swap the peanut butter for Nutella to give the no-bake chocolate oatmeal cookies a richer and stronger chocolate flavor.
- Oreo: Swap the crushed graham crackers for crushed Oreos for a cookies and cream version.
- Pretzel: Use crushed pretzels instead of graham crackers for a salty twist.
- Nut-free: Make a nut-free version by swapping the peanut butter for sunflower butter to make the recipe allergy-friendly.
How to Make No-Bake Oatmeal Chocolate Cookies
Here are the instructions for these easy no-bake chocolate oatmeal cookies. Make sure that you line a baking sheet with parchment so you can drop the cookie mixture onto it when it's ready.

Step 1: Melt the butter and chocolate. Add the butter, chocolate chips, and peanut butter to a saucepan over medium-high heat. Once the butter is melted, stir the mixture until it's nice and smooth.

Step 2: Add sugar. Pour in the sugar and drop the heat to medium. Give it a good stir until the sugar fully dissolves.

Step 3: Fold in oats and crackers. Take your pan off the heat and fold in the oats and crushed graham crackers until they are fully coated in the chocolate mixture.

Step 4: Form and add marshmallows. Then, drop spoonfuls onto the prepared baking sheet to form your cookies. Cut the marshmallows in half and place a half onto the center of each cookie. Finally, set the oven to broil and allow the marshmallows 2-3 minutes to melt onto the cookies. Allow them to fully cool and set on the counter, and enjoy!
Recipe Tips
- Scoop the mixture quickly: The chocolate will set as it cools, so quickly and carefully scoop the mixture into cookies while it's still hot and pliable.
- Make bigger or smaller cookies: You can make these any size that you want. Make larger cookies or bite-sized ones.
- Use regular-sized marshmallows: Don't make this recipe with mini or jumbo marshmallows. It's meant to be made with regular-sized ones.
- Storing: Store these no-bake cookies in an airtight container at room temperature or in the refrigerator for up to 5 days. Freeze the cookies for up to 3 months.

Recipe FAQs
Quick oats will make the cookies drier and denser, and they will lose that classic no bake cookie texture.
Steel-cut oats are chunky, coarse pieces and not flat like old-fashioned oats, which will make the result much chewier and tougher.
If you don't give them enough time to set, they will still be wet and sticky. Allow the chocolate and peanut butter to dry fully before serving.
