Chocolate Oatmeal No-Bake Cookies

These No-Bake Chocolate Oatmeal Cookies are an easy treat for all lovers of chocolate, peanut butter, and marshmallow. Plus, there is no oven required.

Instructions

  • Melt your butter in a large pan over medium-high heat. Once the butter is melted, add the chocolate chips and peanut butter. Stir until the chocolate is melted and the mixture is homogeneous.
  • Add the granulated sugar and milk. Continue stirring over medium heat until the sugar is dissolved.
  • Fold in the oats and crushed graham crackers. Once the ingredients are fully combined, drop large spoonfuls of the mixture into a large baking sheet lined with parchment paper.
  • Cut your marshmallows in half and press one half onto the top of each cookie with the sticky side facing down. Set your oven to broil on high heat. Once the oven is hot, put your cookies in the oven for 2-3 minutes, or until the marshmallows are soft.
  • Let your cookies cool on the counter until they are no longer hot to the touch. Enjoy!

Notes

  • Store these cookies in an airtight container on the counter or in the refrigerator. This will stay fresh for up to 5 days. 
  • Avoid using quick oats or steel-cut oats to achieve the best texture possible.
  • Work quickly to form the cookies before the chocolate mixture starts to dry and set.
