Dulce de leche is a sweet confection made by heating sugar and milk over low heat for a long period of time to create a thick, caramelized sauce.
Both caramel and dulce de leche are caramelized mixtures, but while they may taste similar, they're not the same. Caramel is made by simmering a water and sugar mixture, while dulce de leche is made by simmering a milk and sugar mixture.
Use long, even strokes, curving back and forth to draw the dulce de leche through the top of the fudge. Don't use a mixing motion or overwork it.
