    Ribeye Steak in Crockpot

    Did you know that you make delicious Ribeye Steak in the Crockpot? I am so used to grilling and baking, that I completely overlooked cooking ribeye steak in the slow cooker. We are huge steak lovers in our house so this is hands down one of our favorite meals.

    The steak melts in your mouth after slow cooking for hours. I was worried it would become tough or overcooked, but it was perfect! The secret is the spice rub and searing the steaks before putting them in the slow cooker. Trust me, it's amazing!

    Ingredients

    Below are the ingredients you'll need to make the best ribeye steaks in the crockpot. The gravy adds so much flavor! Plus, this recipe uses common ingredients so there's no need to go on a search for anything.

    • Ribeye steaks: I love ribeye steaks. They are so flavorful and tender! Try this recipe with NY strip steaks as well.
    • Spices: For this recipe, I use salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika. Feel free to use any seasonings you like, including a store-bought blend!
    • Olive oil: I use olive oil to get a nice crust on the ribeyes. You can also use vegetable oil if you like.
    • Butter: I don't think salted or unsalted butter makes a huge difference in saltiness. I like to saute the onions and garlic in butter to infuse even more flavor and to give them some great color.
    • Onion: The soft, tender onions add great flavor as well. They are buttery and delicious!
    • Garlic: I like to add fresh garlic wherever possible because it adds great flavor and texture to any dish.
    • Tomato paste: The rich tomato paste adds depth of flavor and a little bit of acidity to the gravy.
    • Beef broth: This is what I use to deglaze the pan and to create a base for the gravy. Water and low-sodium broth work fine as well. Add more seasonings to your preference.
    • Onion soup mix: I use onion soup mix packets often because they impart a ton of flavor to so many foods. This is great as a gravy thickener in this ribeye recipe.

    Variations

    • Crock Pot steak and potatoes: Add chopped potatoes to the slow cooker to make a complete and comforting meal.
    • Steak and mushrooms: Sliced mushrooms pair perfectly with this steak. Saute them with the onions and garlic for more umami flavor.
    • Ribeye with veggies: Try this recipe with chopped or baby carrots, green beans, or even broccoli florets.
    • Spicy: Add a pinch of chili pepper flakes or smoked jalapeno powder to the seasoning mixture for a bit of heat.

    How to Cook Ribeye Steak in the Crockpot

    Here are the instructions on how to make ribeyes in the slow cooker. It's a simple process to prepare the steaks and then the crockpot does the cooking for you! Be sure to chop the onion and mince the garlic ahead of time to make the other steps easier and quicker.

    Step 1: Make the spice rub. Add all of the seasonings to a small bowl and whisk them until they are well combined.

    Step 2: Season the steaks. Generously season both sides of each of the steaks with the spice mixture.

    Step 3: Sear the steaks. Grab a large skillet and heat it over high heat. Add the olive oil when the pan is hot. Carefully, add the steaks and sear each side for a minute or two. Then, transfer them to the bottom of the crockpot.

    Step 4: Saute onions and garlic. Turn the heat down to medium and melt the butter. Once it's melted, add the chopped onion and cook it for about 5 minutes or until it is soft. Next, add the garlic and cook for another minute or until it becomes fragrant.

    PRO TIP: The searing step is strictly for color. The steaks will be cooked in the crockpot.

    Step 5: Make the sauce. Stir in the tomato paste to the onions. Gradually pour in the broth and add the soup mix. Mix thoroughly and deglaze the pan. Remove the mixture from the heat and slowly pour it over the ribeyes in the crockpot.

    Step 7: Cook. Cover the slow cooker and cook the steaks on high for 2-3 hours or low for 4-6 hours.

    Step 8: Serve. Slice the steaks and enjoy with your favorite side dish.

    ⭐️ Hint: When deglazing the pan, be sure to stir thoroughly and loosen as many "bits" from the bottom as you can.

    Storage Directions 

    • Refrigeration: Store leftover steak in an airtight container in the refrigerator for up to 4 days. 
    • Reheating: For best results, reheat in a skillet over low heat until the steak and gravy are warmed through. I don't recommend using the microwave because it will cause the sauce to separate.
    • Freezing: Place the steaks in a freezer-safe container for up to 3 months. Thaw it in the refrigerator before reheating. It makes a great lunch or dinner!

    Serving Suggestions

    • I love serving the slow cooker ribeye with tasty mushrooms. Try pairing it with easy crockpot mushrooms or soy glazed mushrooms and onions.
    • Steak and potatoes are a match made in heaven. Instead of traditional mashed potatoes, serve it with air fryer hasselback potatoes.
    • Make some air fryer frozen biscuits to sop up the extra sauce.
    • I enjoy corn with steak as well. Try slow cooker corn on the cob or air fryer corn on the cob for an easy side dish.

    • Cool completely before storage: Allow the steaks to cool completely before placing them in the refrigerator or the freezer. This will better preserve their freshness.
    • Don't cook frozen: Don't cook the ribeyes from frozen. They will not sear well and the spice rub won't stick. Thaw the steaks in the refrigerator overnight before preparing and cooking them.
    • Let the steaks rest: Give them time to rest outside of the crockpot before you slice them. This allows the juices to redistribute so they don't run out of the meat and cause it to become dry.

    Can I make this recipe in a skillet?

    Yes! You may finish the steaks in a large skillet on the stovetop or in the oven in the onion gravy.

    Should I sear the steaks before putting them in the slow cooker?

    I highly recommend that you don't skip the searing step. It adds even more depth of flavor and helps to seal in the juices so the ribeyes are extra succulent.

    Can I thicken the gravy if needed?

    Sure! Make a slurry with cornstarch and water and whisk it into the gravy in the slow cooker. Let it cook for a few more minutes to thicken. Feel free to remove the steaks so they can rest during this time.

    • 2 Ribeye steaks thick
    • 1 teaspoon Salt
    • ½ teaspoon Ground black pepper
    • ½ teaspoon Garlic powder

    Instructions
     

    • In a small bowl, mix together the salt, pepper, garlic powder, onion powder, Italian seasoning blend and paprika. Stir until well combined.
    • Season both sides of the steak with the blend and set aside.
    • In a large skillet, heat 2 Tablespoons of oil over high heat. When the pan and oil are hot, sear the steak on both sides then promptly remove from pan and transfer to slow cooker.
    • Lower the heat to medium and add the butter and onion. Cook for about 5 minutes or until onions are tender. Add garlic and cook for 1 additional minute.
    • Add the tomato paste and cook for 1 additional minute.
    • Slowly pour the beef broth and onion soup mix to the skillet and deglaze the pan.
    • Carefully pour the mixture over the ribeye steaks in the slow cooker.
    • Cover and cook on high 2-3 hours or low for 4-6 hours.

      Absolutely loved it. I was preparing a couple of big things to take to a friend that just passed celebration of life and this made it easier so I could make my seafood macaroni salad.

        This recipe will be enough for 2 recipes or 2 packages of onion soup mix. You can easily store half in a small resealable bag or spice jar. I hope you enjoy this recipe as much as we do! All the best. Karin
