    Baked Buffalo Chicken Bites

    Buffalo Chicken Bites are little spicy bits of heaven! They are unique but will be gobbled up quickly at a party! The pizza dough contains shredded chicken smothered in buffalo sauce that bakes amazingly in the oven. I also make a tasty ranch dipping sauce for serving that cools down the heat just enough for a great experience. You can even make it with bleu cheese!

    The whole process it takes to make these chicken appetizers is fast and simple! Even if you don’t cook often, you can still prepare these easily. They utilize precooked chicken and refrigerated pizza dough to make a delicious treat that tastes homemade. The result reminds me of Sonic Buffalo Chicken Dip Bites—with the same creamy yet spicy filling!

    • It utilizes prepared ingredients: This tasty buffalo chicken appetizer uses premade items like buffalo sauce, cooked chicken, and pizza dough to create a delectable shareable snack.
    • It makes a great appetizer or lunch: These are great to serve at a party or as a quick lunch. I love to reheat a couple to enjoy when I get a little hungry during the day. They’re so filling!
    • It freezes perfectly: You may freeze these buffalo bites cooked or uncooked. They have a fantastic shelf life!

    Ingredients

    Below are all of the ingredients needed for the buffalo mini chicken appetizers as well as a creamy ranch dipping sauce. The components are common items that are easy to find!

    For the buffalo bites

    • Cheese: I add shredded cheddar to the buffalo chicken filling. It adds flavor and texture! I finish the hot buffalo chicken pockets with a sprinkling of parmesan cheese to take the presentation up a notch.
    • Rotisserie chicken: This is one of my favorite ways to enjoy a juicy rotisserie chicken besides right off the bone. Just shred up the meat and it’s ready to go.
    • Buffalo wing sauce: You may use any brand and spice level that you like. Frank’s medium buffalo sauce is one of my go-tos because it provides a tolerable level of heat that doesn’t overpower the other ingredients.
    • Pizza dough: Use any refrigerated pizza dough that you like. I prefer the canned variety in the dairy aisle of the grocery store with the biscuits. It’s much easier to work with than the fresh dough in the deli.
    • Butter: Melt the butter and set it aside. This is going to help the tops of your buffalo chicken dip bites brown in the oven. Use salted or unsalted butter based on your preference.

    For the dip

    • Mayonnaise: This makes a rich and creamy base for your dip. It adds plenty of fat and pairs well with ranch and bleu cheese.
    • Ranch or bleu cheese: You may use ranch or bleu cheese dressing, based on your preference. I love ranch!
    • Milk: I add a little bit of milk to thin out the dip. This makes it so it doesn’t become too thick.

    Variations

    • BBQ: Swap the buffalo sauce for your favorite BBQ sauce to add a smoky twist.
    • Pesto: Use a basil pesto instead of buffalo to make a bright and fresh version.
    • Spinach artichoke: Get extra creative and stuff the chicken bites with spinach and artichoke dip.

    Instructions

    Here are the instructions on how to make one of my favorite shredded chicken appetizers—buffalo chicken bites! Preheat the oven to 400 degrees F and line a baking sheet with foil before you get started.

    Step 1: Prepare the dip. Combine the mayo, ranch dressing (or bleu cheese), and milk in a small bowl. Whisk it, cover it, and pop it in the refrigerator.

    Step 2: Make the filling. Add the shredded chicken to a separate bowl with the cheddar cheese and buffalo sauce. Mix until the chicken is well-coated.

    Step 3: Cut the pizza dough. Roll out the pizza dough and cut it into 16 equal squares.

    Step 4: Add the chicken mixture. Spoon about 1 tablespoon of the buffalo chicken mixture into the center of each piece of dough.

    Step 5: Pinch them closed. Carefully pull the edges together and pinch them closed. Repeat this process until all of the buffalo bites are prepared.

    Step 6: Brush with butter. Grab the melted butter and brush it on the top of each piece.

    Step 7: Bake and add cheese. Stick it in the oven and bake for 15-17 minutes or until they are a perfect golden brown. Sprinkle parmesan cheese on top as soon as they come out of the oven.

    Step 8: Serve. Transfer them to a serving platter with the homemade dip and enjoy!

    Recipe Tips

    • Don’t overstuff the dough: Place just enough filling into the center of each piece of dough to make it easy to close. Too much will cause it to ooze out the sides and make a mess.
    • Space them out on the pan: Ensure there’s plenty of space in between each piece as they bake so they get enough color and cook properly.
    • Thaw before reheating: if you freeze the leftovers, thaw them overnight in the refrigerator before you reheat them. This will keep them from becoming too dry on the outside and cold in the middle.

    Storage Directions

    • Storing: Store leftovers in a zipper bag or an airtight container for up to 4 days in the fridge. Freeze them for up to 3 months.
    • Reheating: They are best reheated in the oven or the air fryer at 350 degrees F. The microwave will make them soggy.
    • Make ahead: I like to prepare and stuff the spicy chicken bites and stick them in the refrigerator for a few hours before I plan to serve them. It makes party planning easier!

    Serving Suggestions

    • Try a different dip or serve multiple options at once! Some of my suggestions include creamy dill dip and creamy herb dip.
    • Make some other easy, hot appetizers to serve with this buffalo chicken bites recipe. I love pineapple BBQ meatballs and crispy gnocchi.
    • Enjoy a shot with your snacks, like a sweet tart shot to offset the spicy chicken.

    Recipe FAQs

    Can I make these in the air fryer?

    Yes! Preheat it to 400 degrees F and cook them for 12-15 minutes. Make them in batches if needed to prevent overcrowding of the air fryer basket.

    Can I use biscuit dough?

    Sure. They take a little less time to cook. Check them in 10-13 minutes and add time as needed.

    Why did the filling leak out?

    You have to make sure that each chicken bite is properly sealed. Press down all sides and check for gaps!

    Ingredients
      

    • ¼ cup grated Parmesan cheese
    • 2 ½ cups rotisserie chicken, shredded
    • 2 ½ cups shredded Cheddar cheese
    • ½ cup Buffalo wing sauce, heat is up to you
    • 2 tubes refrigerated pizza dough
    • ¼ cup butter melted

    Dip

    • 1 cup mayonnaise
    • ½ cup ranch or bleu cheese dressing
    • ½ cup milk

    Instructions
     

    • Preheat your oven to 400 degrees. Prepare a rimmed baking sheet with tinfoil and cooking spray.  Set aside.  In a small bowl, combine mayonnaise, milk and dressing.  Refrigerate until ready to serve.

    • Using a large bowl, and a wooden spoon, mix chicken, cheese and wing sauce.
    • On a lightly floured surface, unroll each pizza dough.  Cut each into 16 squares, 4 in each direction.  
    • Place 1 heaping tablespoon of the chicken mixture on to the center of each square. Pull corners together and pinch edges to seal in filling.
    •  Place 1 in. apart on your prepared sheet. Brush tops with melted butter.  
    • Bake 15-17 minutes or until golden brown. Sprinkle with Parmesan cheese while hot. Serve with dip.  Enjoy!

    Notes

    • Store leftover buffalo chicken bites in an airtight container or Ziploc bag in the refrigerator for up to 4 days.
    • Seal each chicken bite properly to prevent the filling from leaking out as they bake.
    • Thaw them before you reheat them if you choose to store them in the freezer.

      You weren't kidding! These disappeared so fast next time I am making a dounble batch! So easy! My hubby And his friends LOVED them. They were not messy to eat and cleanup was easy. We will be making these again!
