- Buffalo wing sauce: You may use any brand and spice level that you like. Frank’s medium buffalo sauce is one of my go-tos because it provides a tolerable level of heat that doesn’t overpower the other ingredients.
- Pizza dough: Use any refrigerated pizza dough that you like. I prefer the canned variety in the dairy aisle of the grocery store with the biscuits. It’s much easier to work with than the fresh dough in the deli.
- Butter: Melt the butter and set it aside. This is going to help the tops of your buffalo chicken dip bites brown in the oven. Use salted or unsalted butter based on your preference.
For the dip
- Mayonnaise: This makes a rich and creamy base for your dip. It adds plenty of fat and pairs well with ranch and bleu cheese.
- Ranch or bleu cheese: You may use ranch or bleu cheese dressing, based on your preference. I love ranch!
- Milk: I add a little bit of milk to thin out the dip. This makes it so it doesn’t become too thick.

Instructions
Here are the instructions on how to make one of my favorite shredded chicken appetizers—buffalo chicken bites! Preheat the oven to 400 degrees F and line a baking sheet with foil before you get started.

Step 1: Prepare the dip. Combine the mayo, ranch dressing (or bleu cheese), and milk in a small bowl. Whisk it, cover it, and pop it in the refrigerator.

Step 2: Make the filling. Add the shredded chicken to a separate bowl with the cheddar cheese and buffalo sauce. Mix until the chicken is well-coated.

Step 3: Cut the pizza dough. Roll out the pizza dough and cut it into 16 equal squares.

Step 4: Add the chicken mixture. Spoon about 1 tablespoon of the buffalo chicken mixture into the center of each piece of dough.

Step 5: Pinch them closed. Carefully pull the edges together and pinch them closed. Repeat this process until all of the buffalo bites are prepared.

Step 6: Brush with butter. Grab the melted butter and brush it on the top of each piece.

Step 7: Bake and add cheese. Stick it in the oven and bake for 15-17 minutes or until they are a perfect golden brown. Sprinkle parmesan cheese on top as soon as they come out of the oven.

Step 8: Serve. Transfer them to a serving platter with the homemade dip and enjoy!
Recipe Tips
- Don’t overstuff the dough: Place just enough filling into the center of each piece of dough to make it easy to close. Too much will cause it to ooze out the sides and make a mess.
- Space them out on the pan: Ensure there’s plenty of space in between each piece as they bake so they get enough color and cook properly.
- Thaw before reheating: if you freeze the leftovers, thaw them overnight in the refrigerator before you reheat them. This will keep them from becoming too dry on the outside and cold in the middle.

- 2 tubes refrigerated pizza dough
- ¼ cup butter melted

- 1 cup mayonnaise
- ½ cup ranch or bleu cheese dressing
- ½ cup milk
Instructions
- Preheat your oven to 400 degrees. Prepare a rimmed baking sheet with tinfoil and cooking spray. Set aside. In a small bowl, combine mayonnaise, milk and dressing. Refrigerate until ready to serve.

- Using a large bowl, and a wooden spoon, mix chicken, cheese and wing sauce.
- On a lightly floured surface, unroll each pizza dough. Cut each into 16 squares, 4 in each direction.

- Place 1 in. apart on your prepared sheet. Brush tops with melted butter.
- Bake 15-17 minutes or until golden brown. Sprinkle with Parmesan cheese while hot. Serve with dip. Enjoy!
