Ingredients
Here are all of the ingredients needed to make the best slow cooker pork chops and potatoes. They are common items that you can easily find at the grocery store and I bet many of them are in your kitchen already!
- Onion: I use either white or yellow onion in the slow cooker for this recipe. They have a subtle flavor and a hint of sweetness that balances the other ingredients.
- Potatoes: I like baby red potatoes with pork chops. Feel free to use Yukon gold or cubed russet potatoes instead.
- Pork chops: You may use boneless or bone-in pork chops. I often go with boneless for convenience but the bones add extra flavor — they just take a little longer to cook. Ensure the chops are around ¾ - 1 inch thick so they don’t overcook.
- Spices: I chose salt, pepper, garlic powder, and onion powder to season the pork chops. These seasonings add plenty of flavor to the meat and as they cook, the juices run into the potatoes.
- Olive oil: Any kind of oil will work to sear the pork chops. I typically go with olive oil but avocado oil and canola oil are also great choices.
- Cream of chicken soup: I love using cream soups in crock pot recipes. They add flavor, creamy texture, and tons of moisture. I chose the cream of chicken because I think it pairs well with pork.
- Chicken broth: I add broth to help cook the veggies and thin out the soup to create a gravy-like consistency. It’s perfect for serving. Feel free to use vegetable or beef broth instead.

How to Make Slow Cooker Pork Chops with Onions and Potatoes
Below are all of the steps needed to make these easy crock pot pork chops. I recommend that you grease the inside of your crock pot with nonstick cooking spray before adding any ingredients to ensure that they don’t get stuck on the bottom.
Step 1: Add the potatoes and onions. Place the prepared potatoes and onions into the bottom of the crock pot.
Step 2: Season the pork chops. Sprinkle the seasonings generously onto each side of the pork chops.
Step 3: Sear the pork. Heat a cast-iron skillet over medium heat. Add the olive oil and sear the pork chops for 1-2 minutes on each side or until they have a golden brown crust. Make sure the skillet is heated fully before adding the chops so you get a nice crust.
Step 4: Add them to the crock pot. Transfer the seared pork chops to the crock pot and the onions and potatoes.
Step 5: Make and add the sauce. Combine the cream soup and broth in a small bowl. Then, pour it over the top of the pork and potatoes.
Step 6: Cover and cook. Add the lid and cook on low for 4-6 hours or on high for 3-4 hours.
Recipe Tips
- Use a meat thermometer: To ensure the pork chops are cooked properly, test their doneness with a meat thermometer. They should be between 145 and 160 degrees F, depending on how done you like them.
- Cut the potatoes evenly: Make sure you cut the potatoes the same size, so they also cook evenly. I typically cut them in half but quarter any that are significantly larger.
- Amount of potatoes: The amount of potatoes you add to the pot is quite flexible, so feel free to use more or less if you want. You can also replace half with carrots chopped in 1-inch pieces.
- Even chops: Make sure all your chops are about the same thickness, so they cook in the same amount of time. You might have better luck getting them from the meat counter, rather than choosing those that are pre-packaged.
- Shred the meat: Feed a larger crowd by pulling or shredding the meat so it goes a bit further.

Storage Directions
- Storing: Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze them for up to 3 months. Thaw them in the refrigerator overnight before you reheat them.

Yes! This pork chop casserole with potatoes can easily be made in a baking dish in the oven. Prepare it the same but cook it in the oven at 375 degrees F for about 30 minutes. Fork test the potatoes if needed.
It’s not required but definitely recommended! It adds depth of flavor and seals in the juices so the pork is extra moist and tender.
I find that the potatoes get a lot of flavor from the pork juices and the sauce mixture. Feel free to sprinkle salt and pepper over them if you prefer!

Slow Cooker Pork Chops and Potatoes
Ingredients
- 1 small onion thinly sliced (about 1 ½ cups)
- 2 lbs red baby potatoes sliced in half, about 30 extra small potatoes
- 4 1-inch thick boneless pork chops
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 Tablespoons olive oil
- 1 10.5-ounce can cream of chicken soup
- ½ cup chicken broth
- Optional: fresh parsley for garnish
Instructions
- Prepare an 8 quart slow cooker with a light coating of cooking spray.
- Place the onions and potatoes in the bottom of the slow cooker and set aside.
- Preheat a large skillet to medium high heat.
- Season pork chops with salt, pepper, garlic powder and onion powder.
- Add oil to the preheated skillet and sear seasoned pork chops on each side until golden brown.
- Place pork chops on top of potatoes and onion mixture in the slow cooker.
- In a small bowl, whisk together the cream of chicken soup and chicken broth.
- Pour over the top of the pork chops.
- Cover and cook 4-6 hours low or 3-4 hours high.
- Drizzle extra sauce over the pork chops and garnish with fresh parsley.
Notes
- You can add more potatoes if you want to! I sometimes replace half of the potatoes with carrots or simply add some besides the potatoes.
- Shred the pork after cooking to stretch the dish and serve more people.
- Choose even sized pork chops and the potatoes are cut the same size so everything is done at the same time.
