Slow Cooker Pork Chops and Potatoes

This recipe for Crock Pot Pork Chops and Potatoes is an easy and flavorful meal everyone will enjoy. The pork and potatoes are perfectly tender every time.

  • Prepare an 8 quart slow cooker with a light coating of cooking spray.
  • Place the onions and potatoes in the bottom of the slow cooker and set aside.
  • Preheat a large skillet to medium high heat.
  • Season pork chops with salt, pepper, garlic powder and onion powder.
  • Add oil to the preheated skillet and sear seasoned pork chops on each side until golden brown.
  • Place pork chops on top of potatoes and onion mixture in the slow cooker.
  • In a small bowl, whisk together the cream of chicken soup and chicken broth.
  • Pour over the top of the pork chops.
  • Cover and cook 4-6 hours low or 3-4 hours high.
  • Drizzle extra sauce over the pork chops and garnish with fresh parsley.

Notes

  • You can add more potatoes if you want to! I sometimes replace half of the potatoes with carrots or simply add some besides the potatoes.
  • Shred the pork after cooking to stretch the dish and serve more people. 
  • Choose even sized pork chops and the potatoes are cut the same size so everything is done at the same time.
