Enchiladas are a classic Mexican dish that is usually served with rice, beans, and tortilla chips. But what to serve with enchiladas if you're looking to change things up? Check out this list of enchilada side dishes!

    WHAT ARE ENCHILADAS?

Enchiladas are a traditional Mexican dish that consists of corn tortillas wrapped around other ingredients and covered in sauce. While there are many different kinds, enchiladas can be separated into two categories: red enchilada sauce or green enchilada sauce (enchiladas verdes). The word "enchilar" translates to "to put on chili." Red enchiladas are usually filled with beef or chicken, while green enchiladas tend to be vegetarian.

Some of our favorite enchilada recipes are the following: sour cream chicken enchiladas, buffalo chicken enchiladas, pollo fundido, and slow cooker enchilada chili.
