How to Make Lasagna Soup
Here's a look at the main steps that go into making one-pot lasagna soup. It's pretty simple to throw together for dinner tonight.
- Cook the ground and onion in a large dutch oven with olive oil until the meat is browned and the onions cooked. Add the garlic and cook for one additional minute or until fragrant. Drain off the fat.
- Add the marinara, chicken broth, crushed tomatoes, Italian seasoning, salt and pepper to the pot with the meat and vegetables.


- Simmer the soup covered for 25 minutes.
- Cook the lasagna noodles al dente following the package directions. When ready, drain the noodles, and cut them into bite sized pieces.


- Add the noodles to the pot of soup.
- Combine the ricotta, parmesan, mozzarella and parsley in a small bowl and mix until well combined.

- 1 lb lean ground beef
- 1 cup sweet onion chopped
- 3 cloves garlic minced
- 1 24 ounce jar marinara
- 6 cups chicken broth
- 1 14 oz can crushed tomato
- 2 Tablespoons Italian seasoning blend
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 12 lasagna noodles
Topping
- 1 cup ricotta cheese
- ½ cup parmesan cheese
- ½ cup mozzarella cheese
- 1 Tablespoon fresh parsley
Instructions
- In a large dutch oven, heat oil over medium heat.
- Add ground beef and onion and cook until beef is cooked through and onion is tender and transparent.
- Add the garlic and cook for one additional minute or until fragrant.
- Drain off the fat and return the mixture to the dutch oven along with the marinara, chicken broth, crushed tomatoes, Italian seasoning, salt and pepper.
- Simmer, covered, for 25 minutes.
- Meanwhile, cook the lasagna noodles to al dente doneness according to package directions. Drain and cut into bite sized pieces. When the soup is finished, stir the noodles into the soup base.
