This S'mores sugar cookie is exactly what it sounds like! Classic toasted marshmallow and melted chocolate filling in a cookie sandwich using soft, chewy sugar cookies.
If you haven't noticed, I love S'mores! Not only is the classic version divine but so are these Oreo S'mores, Frozen S'mores, and these S'mores blondies!
But my sweet tooth doesn't end there! I love to mash-up dessert favorites into even greater desserts, which is exactly what I did with these tasty sandwich cookies!

How to Make S'mores Cookie Sandwiches
Making these sugar cookie s'mores is super easy. It's just a basic sugar cookie recipe and then marshmallows and chocolate. That's it!

- Beat the butter and sugar together with an electric mixer.
- Add the eggs and vanilla and beat again.
- Add the dry ingredients to the bowl.
- Use the mixer and and mix until combined.
- Drop the balls of dough onto a baking sheet and bake until golden.
- Flip the baked cookies over and top half of them them with some chocolate and a marshmallow.
- Broil to toast the marshmallows.
- Top with another cookie and enjoy!
PRO TIP: Press the top cookie down just a bit when adding it to ensure the cookies hold together.
Storage
These cookies are best served freshly made!
Room Temperature: Store the sugar cookies WITHOUT the S'mores filling in an air-tight container for up to 5 days at room temperature or up to 2 weeks in the refrigerator.
Freezer: You can freeze the cookies without the filling for up to 3 months.
Reheat: When ready to serve, top the cookies with the chocolate and marshmallow and place them under the broiler to toast.
Make ahead: Bake the cookies and freeze or make the dough in advance and store it in the fridge for up to four days before baking the cookies.
Tips
- Serve s'mores sugar cookies immediately. They're best while still warm and gooey!
- Press the marshmallow down a little bit as soon as removed from the oven to secure the second cookie to the cookie sandwich.
- Want more chocolate? Add a piece of chocolate to the top of each toasted marshmallow as soon as they come out of the oven. This will make the top cookie even more likely to stay in place.

No it's not necessary. But if you want to make the cookie dough in advance, feel free to store it in the fridge until you're ready to bake the cookies. Remove it from the fridge 30 minutes before baking.
The edges of the cookies should be golden brown and the center should be just set. If you prefer crunchy cookies, you can bake them for an additional 1-2 minutes to get a crispier texture.
Once you add the top cookie and lightly press down on it, the hot marshmallow will help keep it together. You can also add another piece of chocolate to the top of the hot marshmallow as soon as they come out of the oven and before adding the top cookie.

S’mores Sugar Cookie Recipe
Equipment
- Parchment paper or cooking spray
Ingredients
- ½ cup salted butter
- 1 cup granulated sugar
- 1 large egg
- 1 ½ teaspoons vanilla extract
- ¼ cup whole milk
- 2 cups all-purpose flour
- ½ cup crushed graham crackers about ½ sleeve
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- 10-12 s’mores style square marshmallows
- 2 Hershey’s milk chocolate bars
Instructions
- Preheat the oven to 375°F.
- While the oven is preheating, cream the butter and sugar in a large mixing bowl using an electric hand mixer on medium-high speed. You can also use a stand mixer if you have one. Mix the ingredients for 2-3 minutes, or until smooth.
- Add the egg and vanilla. Mix the ingredients for an additional minute to fully incorporate the egg.
- On a low speed, slowly incorporate the flour, graham cracker crumbs, baking powder, and baking soda until no pockets of dry ingredients remain in the cookie dough.
- Drop dollops of dough about 1 ½ tablespoons in size on a baking sheet. Leave about an inch between each cookie and bake them for 11 minutes.
- Once all the cookie dough has been baked, top half the cookies with 2 pieces of Hershey chocolate and one marshmallow. Broil the topped cookies on high for about a minute, or until the marshmallows are golden brown.
- Remove the pan from the oven and top each s’more sandwich with the remaining cookies.
- Serve immediately and enjoy!
