On a recent trip to my local Trader Joe's, I was reminded about whoopie pies because I saw them in the bakery aisle. I knew that I needed to head home and see if I could come up with a fun spin on whoopie pies. I mean the chocolate whoopie pies are classic, but I like to jazz things up some.
The inspiration for these whoopie pies is a recipe I've been wanting to try from a friend of mine, but it relies on an oven and the thought of spending that much time in my kitchen when I have an air fryer at my disposable just didn't seem smart. So here's my version of taking something classic and giving it a fun twist to make something unique. And if you're wondering why I named these whoopie pies after the sugar cookies, well, that's because they appear to be thin enough to be a cookie, but taste like cake.

What is a Whoopie Pie
I didn't know what a whoopie pie was before I became an adult. But, in case you are curious to know exactly what a Whoopie Pie is, let me explain. On the inside it's a soft filling that is sandwiched between two cake-like layers that are also similar to cookies. These tasty morsels are sweet cookie style sandwiches that are very addictive.
How do I store Whoopie Pies
Due to the soft and rich filling you'll probably want to eat these straight away. However, if you are planning on making sugar cookie whoopie pies ahead of time so that you can have them later this week wrap them individually in plastic wrap or put a few layers of tin foil around each one. Then you can store them in the fridge or freezer.

What is the best way to frost Air Fryer Sugar Cookie Whoopie Pies
I used a buttercream type of frosting recipe that uses powdered sugar and milk. It's the same type of icing I always use to make cakes, brownies, cookies and cupcakes. To frost these cookies you will need to use some care. The cake outside is very soft, so be gentle when you are placing your filling. I like to pipe my filling into the center of the whoopie pie instead of trying to spread the frosting.
Can I freeze Sugar Cookie Whoopie Pies
Yes you can, but they will not taste as fresh. To freeze the whoopie pies make sure that they are wrapped well in plastic wrap or tinfoil. Then you should be able to keep them in a freezer for about 2-3 months without any problems with freezer burn.

Can I make these cookies ahead of time
Yes, you can! These whoopie pies are made with ingredients that you'd find at home in your pantry. The best part about them is that they don't require any special tools or kitchen gadgets to make them. You just need an air fryer and the ingredients.
However, I don't recommend making them more than 24 hours in advance. The sugar cookies outside are already soft and the frosting will make them even softer so be sure to make them within 24 hours of when you plan to eat them.
Ingredients for Air Fryer Sugar Cookie Whoopie Pies
- 1 ¼ cups sugar
- 1 cup butter, softened
- 3 egg yolks
- 1 teaspoon vanilla
- 2 ½ cups flour
- 1 teaspoon baking soda
- ½ teaspoon cream of tartar
Frosting Ingredients:
- ¼ cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla
- 2-3 tablespoon milk

How to Make This Whoopie Pie Recipe
Step 1. In a large mixing bowl, cream sugar and butter together.
Step 2. Add egg yolks and vanilla. Beat again.
Step 3. Add flour, baking soda, and cream of tartar. Beat again.
Step 4. Form dough into tablespoon size balls and flatten them gently.
Step 5. Place them in an air fryer basket lined with parchment paper 2 inches apart.
Step 6. You will have to bake these in batches.
Step 7. Air fry at 350ºF for 7 minutes or until golden brown and slightly cracked on top.

Step 1. In a medium mixing bowl, cream butter and powdered sugar together.
Step 2. Add 2 tablespoons of milk and vanilla. Beat well.
Step 3. If it is too thick, add more milk. If it is too thin, add more powdered sugar

- Get out and measure all of your ingredients.
Cookie Directions

- Form dough into tablespoon size balls and flatten them gently.

Frosting Directions
- In a medium mixing bowl, cream butter and powdered sugar together.
- Add 2 tablespoons of milk and vanilla. Beat well.
- If it is too thick, add more milk. If it is too thin, add more powdered sugar.
- Air fry at 350ºF for 7 minutes or until golden brown and slightly cracked on top.
- Allow to cool.
- Add frosting to bottom of one cookie.
- Place a second cookie on top.
- Roll in sprinkles.
- Enjoy every bit!
