    Ingredients
      

    • ยฝ cup salted butter softened
    • ยฝ cup white granulated sugar
    • ยฝ cup light brown sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • 1 ยฝ cups all-purpose flour
    • 1 ยผ cups semi-sweet chocolate chips
    • 1 cup chocolate chip teddy grahams or Annie's
    • 12 large marshmallows

    Instructions
     

    • Preheat your oven to 350ยฐF.
    • Use an electric hand mixer on medium-high speed to beat the butter and sugars together for 2 minutes. After 2 minutes, add the egg and vanilla. Beat for another minute, or until the mixture is light and fluffy.
    • Reduce the speed of your hand mixer and gently whisk in the baking soda and flour. Make sure no pockets of dry flour remain in your cookie dough.
    • Use a silicone spatula to fold in the chocolate chips and teddy grahams until they are evenly distributed throughout the cookie dough. Be careful not to overmix your cookie dough or risk dense, heavy cookies.ย 
    • Use a cookie scoop or large spoon to drop large balls of cookie dough onto a baking sheet. Flatten each ball of cookie dough into a disc. Place a marshmallow in the middle of the cookie dough and then fold the cookie dough over the marshmallow until it is completely enclosed.
    • Bake your cookies for 12 minutes. Let your cookies cool on the pan for 10 minutes, and then transfer them to a wire cooling rack.

    • These s'mores cookies are very delicate right out of the oven, so let them cool on the baking sheet for about 10 minutes before transferring them to a wire rack. This helps them set up properly and keeps them from falling apart.ย
