    • Marshmallows: I prefer mini marshmallows over regular ones because they melt much more quickly and evenly. These are important because they act as the binder for the Rice Krispies eggs.
    • Butter: Not only does the butter add richness, but it also provides moisture to help the treats from drying out. I like to use unsalted so they don't have a salty flavor.
    • Rice Krispies: Ensure you use fresh cereal for the best crunch, as stale cereal loses its crunch. Also, measure accurately because too much cereal won't hold together.
    • Food coloring: I use vibrant spring colors like pink, purple, etc. Gel food coloring is best to preserve the consistency of the treats. Too much liquid coloring could thin it out. I use the same food coloring in this swirl Easter Cheesecake pie.

    Step 1: Make the base. Add your butter and mini marshmallows to a microwave-safe bowl and heat for 1 minute, then heat in 15-second intervals until the mixture is melted and smooth.

    Step 3: Divide and color. Divide the marshmallow mixture into smaller bowls, based on how many colors you use (I used 4 colors, so 4 bowls). Start by adding 1-2 drops of color, and add more if needed to reach your desired color.

    Why are my Rice Krispies Easter eggs so sticky?

    Too much marshmallow or butter can prevent the treats from setting, so ensure that you measure them accurately. Also, if you overheat the marshmallows, it keeps them from setting. Watch the heat and remove the pot as soon as they fully melt.

    Why are my Rice Krispies Easter eggs bleeding color?

    Equipment

    • large microwave-safe mixing bowl
    • 3-4 medium mixing bowls (you'll need one for every colour you are making)
    • Non-stick cooking spray
    • Parchment paper

    • 3 tablespoons unsalted butter
    • 10 ounces mini marshmallows
    • 1 teaspoon vanilla extract
    • 6 cups rice krispie cereal
    • 3-4 different food colouring I recommend spring colours

    • Place the marshmallows, butter and vanilla extract in a large, microwave-safe mixing bowl. Microwave on high for 1 minute. Stir the bowl. If the marshmallows have not fully melted, continue to melt in 15 second increments until fully melted. Stir the bowl between each increment. Add vanilla and stir until blended.
    • Arrange your medium mixing bowls. If you are making 3 different colours, you'll need 3 bowls… if making 4 colours, you'll need 4 bowls, etc.
    • Divide your marshmallow mixture, evenly, amongst the bowls. I am making 4 colours so I am dividing it 4 ways.
    • You'll need to work quickly because the marshmallows begin to set almost immediately. Add a few drops of food colouring to one of your bowls and stir to get the colour you would like to see in your Easter egg. Add the other colours to the remaining bowls and stir.
    • Divide the Rice Krispie cereal evenly amongst the 4 bowls. Stir to fully coat the cereal.
    • Now we are going to get our hands a little dirty. Spray your hands with cooking spray. Spoon approximately ¼ cup of the coloured rice krispie treats into your hands and press it into an egg shape. Lay the egg on a sheet of parchment or sprayed rack. Continue doing this for each colour until all the treats have been formed into Easter eggs. Let the eggs stand to set for at least 20 minutes before enjoying.

    Notes

    • Avoid overheating the marshmallow mixture to ensure the Easter egg Rice Krispies set and aren't overly sticky.
    • Allow them to cool fully before moving them to prevent the color from bleeding.
    • Grease your hands generously to help keep the Rice Krispies from sticking to them.
