    Old Fashioned Peanut Brittle Bites are so tasty. The right amount of sweet and salty and totally addictive! Perfect for any occasion!

    Old-Fashioned Peanut Brittle Bites

    I have made this Old Fashioned Peanut Brittle Bites recipe without a thermometer myself before and I highly recommend purchasing one. Not only will making this candy be easier you avoid the possibility of ruining it all together! 

    Candy thermometers are pretty cheap and easily clip on to the inside of your saucepan. You may not use them very often but they are definitely handy to have around for when you need one!

    Our Nutty English Butter Toffee recipe also strongly recommends a candy thermometer but boy oh boy are those layered bites fabulous. Chocolate, toffee and your favorite nut! I love almonds but pecans and walnuts work great too! 

    I always have a couple of candies for my sweet trays, at any holiday celebration, and these two are my absolute favorite and I have tried making a lot over the years!

    If anyone out there is like me and still gives edible gifts than both of these recipes are a great tasty idea and the perfect choice!  Anyone else still give edible gifts over the holidays or am I the only one? Sorry. I have to know!

    Old-Fashioned Peanut Brittle Bites

    Ingredients in Old Fashioned Peanut Brittle Bites

    • sugar
    • corn syrup
    • water
    • butter
    • salted, dry roasted peanuts
    • baking soda
    • vanilla

    How to make Old Fashioned Peanut Brittle Bites

    Grease your mini muffin pan with butter and set aside.

    In a small, heavy bottomed saucepan combine sugar, corn syrup and water. Attach your candy thermometer to the side of your saucepan so it touches the syrup mixture.

    Turn the heat on to medium high and stir the mixture until the sugar is totally dissolved!

    Once mixture is gently boiling add butter. Stir frequently.

    The syrup mixture will become a golden color and very thick, about 20 minutes. The thermometer should read 280 degrees.  

    Add peanuts and stir constantly until the thermometer reads 305 degrees.

    Remove your saucepan from the heat.

    Quickly stir in baking soda and vanilla.

    Carefully spoon the hot mixture into your prepared pan.

    Allow to cool on your counter.

    Remove bites from the pan and enjoy!
