Best Ground Beef Casserole
This Meaty Noodle Casserole is quick, easy and delicious. Any ground meat, pasta and some vegetables, topped with crispy fried onions and cheese!
We are in the process of moving and this Meaty Noodle Casserole seemed like a great choice for dinner. I used ground beef and ground pork for the casserole in the photo but usually I use ground turkey. Any ground meat will work.
I usually use onions, mushrooms, and peppers to make this Meaty Noodle Casserole. You can use any vegetables you prefer of have on hand. In the past I have thrown in a can of carrots and peas, a can of corn or even some frozen vegetables that I wanted to use up.
Just remember to add canned or frozen vegetables, to your skillet, right before you dump it all in to your casserole dish. You want to have time to give everything a quick stir to make sure the vegetables are distributed evenly.
I always make this simple Meaty Noodle Casserole with drained, diced, canned tomatoes and my husband prefers not to drain them. He loves to dip fresh bread in the juices left on his plate. I have to admit that I have done that more than once myself and have not been disappointed! I am just trying to eat less and less bread as time goes on!
We tend to stick with condensed cream of mushroom soup. We are not huge celery fans so we tend to avoid using cream of celery soup but a can of cream of tomato will work in a pinch! Overall, I have to admit, I prefer the taste using the cream of mushroom soup over the others we have tried through the years.
Finishing almost any casserole off with crispy fried onions and a layer of cheese on top is so tasty and I urge you to give it a try! Cover the onions as best you can with the shredded cheese so the onions don't burn. The topping tastes delicious!

Ingredients for Meaty Noodle Casserole
- ground beef, pork or turkey
- oil
- canned tomatoes
- cream of mushroom soup
- crispy fried onions
- sweet peppers
- onions
- mushrooms
- cheese
- salt
- pepper
- egg noodles or your favorite pasta
How to make Meaty Noodle Casserole
Cook your noodles of choice according to package directions. Drain and set aside.
In a skillet, cook mushrooms, onions and ground meat.
Throw peppers in for a minute and then drain, if necessary.
If you drained your meat mixture, return mixture to your skillet.
Add mushroom soup, tomatoes, cooked noodles, salt and pepper into your skillet.
Sometimes I throw ½ cup of shredded cheese into the mixture and sometimes I don't. It is up to you.
Dump into a casserole dish. I usually use one that is 8x8 and 2 inches deep.
Cover and bake.
Uncover your casserole. Turn your oven up to broil.
Sprinkle crispy fried onions all over the top of your casserole. Next, cover the crispy onions with shredded cheese.
Return your casserole to your oven and broil until your cheese is melted and as brown as you like it!

- Casserole Dish Approximately 8 x 8 and 2 inches deep or equivalent
Ingredients
- 1 tablespoon oil
- 1 pound ground beef, pork, and/or turkey
- 1 can (14 ½ oz) canned tomatoes, diced, drained
- 1 can (10 ¾ oz) condensed cream of mushroom soup
- 1 can crispy fried onions
- 1 cup mushrooms, sliced
- 1 small onion, chopped
- ½ large green pepper, diced
- 1-2 cups cheese, shredded (or more to taste), divided
- ¾ teaspoon salt to taste
- 1 teaspoon pepper to taste
- 2 cups egg noodles, uncooked
Instructions
- Preheat the oven to 350 degrees. Cook the noodles according to package directions. Drain and set aside.
- In a skillet, over medium heat, cook mushrooms, onions and ground meat. Throw peppers in for a minute and then drain, if necessary. If you drained your meat mixture, return mixture to your skillet.
- Add mushroom soup, tomatoes, cooked noodles, salt and pepper into your skillet. Sometimes I throw ½ cup of shredded cheese into the mixture and sometimes I don't. It is up to you.

- Uncover your casserole. Turn your oven up to broil. Sprinkle crispy fried onions all over the top of your casserole. Next, cover the crispy onions with shredded cheese.
