    Ripe, juicy peaches get topped with a rich, buttery crumble in this Cast Iron Peach Cobbler recipe. This one’s a heirloom recipe you really don’t want to miss, especially if you have some fresh peaches waiting to be put to use.

    Every peach season, my grandmother would make this dish and we always loved it. Even to this day, this remains as one of my favorite ways to eat up fresh peaches!  

    I’m also a big fan of quick and easy dessert recipes, and love experimenting with unique sweet treats that use up seasonal fruits. If you love that too, you might want to try your hands at some rhubarb custard bars and my caramel apple crisp recipe.

    • Easy-peasy: I personally call it a lazy peach cobbler- it’s really that easy to make.
    • Perfect summer dessert: There’s really no better way than this to showcase and use up some of the season’s best produce.

    Ingredients

    • Peaches: Start with good quality, ripe, and firm peaches. Check for any soft spots or tenderness, and skip ones that seem too mushy. 
    • Sugar: Use light brown sugar for extra flavor, or just stick to the classic white sugar if you don’t have it. 
    • Cornstarch: Cornstarch helps thicken the peach layer. 
    • Flour: Just your classic all-purpose flour will do the trick. 
    • Butter: Use unsalted or salted, whichever you prefer. You’ll need this for the rich crumble that goes on top of this simple cobbler. 
    • Egg: Another essential ingredient for the crumble top. Adds tons of moisture and richness. 
    • Lemon juice: To brighten and enhance the flavor of the fresh peaches. Substitute with orange juice if you don’t have fresh lemon at hand. 
    • Vanilla: For its delicious, deep sweetness. 
    • Cinnamon: Just a hint of this adds a nice bit of rustic flavor to this lazy man’s peach cobbler.

    Variations

    • Start with frozen: If you don’t have fresh peaches, using the frozen fruit also works great for this recipe. I love making peach cobbler with frozen peaches! 
    • Use canned: Don’t have fresh peaches but still want to enjoy this recipe? Start with canned peaches in light syrup, but remember to drain away that excess liquid first. Also, remember that canned peaches are already sweet and soft, so you won’t need to mix them with the sugar, and they won’t need as much time to cook. 
    • Make it nutty: For some additional texture and deliciousness, throw in some chopped nuts like pecans or walnuts, or both! 
    • Gluten-free: Swap your all-purpose flour with gluten-free flour to make gluten-free peach cobbler. 
    • Fruit fun: Try this recipe with different fruits, and it’ll turn out just as delicious. Apples, nectarines, and plums are good options or you can also use a combination of two fruits. Other options include mixed berries (think blackberries, blueberries, and strawberries), rhubarb, and even cherries! 

    How to Make Cast Iron Peach Cobbler

    Begin by greasing a skillet and preheating your oven to 375 degrees.

    Step 1: Prep peaches. Core and slice peaches. Add cinnamon, cornstarch, lemon juice, and some sugar on them and mix.

    Step 2: Prep dry mix. In another bowl, combine the flour, sugar, sea salt, and some butter.

    Step 3: Finish the crumb topping. Add the egg and mix gently.

    Step 4: Assemble. Pour the peach mixture evenly into the skillet. Top with crumbles of the dough and some of the leftover sugar. Bake for 45 minutes or until golden brown on the top. Serve with vanilla ice cream.

    ⭐️ Hint: Make sure your peach slices are roughly the same thickness. This will get them all cooked and tender evenly.

    Storage Directions 

    • Storing: If you have any leftovers, I would recommend covering them up with cling wrap and refrigerating them. They should stay good for up to 4 days, if not longer. 
    • Reheating: Ready to enjoy the peach cobbler crumble again? Pop it in the oven for a few minutes and enjoy it warm. If you’re reheating small, individual servings, use your microwave! 
    • Freezing: I wouldn’t recommend freezing the cobbler. Freezing and thawing can ruin the texture of both the layers. 

    Serving Suggestions

    The best way to enjoy this cast iron cobbler is to serve it warm, topped with a scoop of vanilla ice cream or whipped cream. For something a bit different add a scoop of rhubarb ice cream or a drizzle of blueberry syrup or my butter pecan syrup on the top. 

    And of course, you can just go with a light dusting of icing sugar too!

    Expert Tips

    • Choose coarse: If you can, use coarse sugar to sprinkle over the cobbler. This lends it a beautiful texture.
    • Use cold butter: Make sure the butter you’re using to prepare the flour mixture is cold. This will give it a better texture.
    • Let it sit: I would recommend letting the cobbler sit for 20-30 minutes on the countertop and cool down a little bit, soaking up all the delicious juices before you serve it.

    Can I make this old-fashioned peach cobbler without a cast iron skillet?

    Yes, you can! Simply use any oven-safe pan instead, and follow the recipe the same way.

    Should I peel the peaches?

    There’s no need to peel the peaches before you use them for this recipe unless you absolutely want to.

    Ingredients
      

    • 8 peaches pitted and sliced
    • ¾ cup granulated sugar divided, plus 1-2 teaspoons for topping
    • 2 tablespoons cornstarch
    • 1 teaspoon ground cinnamon
    • 1 cup all-purpose flour
    • 1 tablespoon lemon juice
    • 1 tablespoon pure vanilla extract
    • ½ teaspoon sea salt
    • ½ cup unsalted butter cold (1 stick)
    • 1 large egg

    Instructions
     

    • Lightly spray a 10” cast iron skillet and preheat oven to 375F.
    • Core and slice peaches into thin wedges, and set aside in a medium bowl.
    • In a small bowl, whisk together ½ cup sugar, cornstarch, cinnamon.
    • Pour sugar mixture over the peaches and mix well (I like to do this in 2 steps for a more even mix).
    • Meanwhile, in another medium bowl, whisk all-purpose flour, remaining ¼ cup sugar (reserving the 1-2 teaspoons for topping), and sea salt.
    • Add in chunks of cold butter and work it into the flour mixture by hand (note: if you have a dough blender/cutter you can use this, or two forks).
    • Add the egg into the dough and mix until well combined.
    • Pour peach mixture evenly into prepared skillet.
    • Sprinkle crumbles of dough on top of the peaches and cover even with remaining sugar.
    • Bake for 45 minutes or until golden brown on top and allow it to cool and thicken (about 15-20 minutes).
    • Enjoy warm with vanilla ice cream of on its own!
