- Use canned: Don’t have fresh peaches but still want to enjoy this recipe? Start with canned peaches in light syrup, but remember to drain away that excess liquid first. Also, remember that canned peaches are already sweet and soft, so you won’t need to mix them with the sugar, and they won’t need as much time to cook.

How to Make Cast Iron Peach Cobbler
Begin by greasing a skillet and preheating your oven to 375 degrees.
Step 1: Prep peaches. Core and slice peaches. Add cinnamon, cornstarch, lemon juice, and some sugar on them and mix.
Step 2: Prep dry mix. In another bowl, combine the flour, sugar, sea salt, and some butter.
Step 3: Finish the crumb topping. Add the egg and mix gently.
Step 4: Assemble. Pour the peach mixture evenly into the skillet. Top with crumbles of the dough and some of the leftover sugar. Bake for 45 minutes or until golden brown on the top. Serve with vanilla ice cream.

- Freezing: I wouldn’t recommend freezing the cobbler. Freezing and thawing can ruin the texture of both the layers.

Equipment
- 10” Cast Iron Skillet
Ingredients
- 8 peaches pitted and sliced
- ¾ cup granulated sugar divided, plus 1-2 teaspoons for topping
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 cup all-purpose flour
- 1 tablespoon lemon juice
- 1 tablespoon pure vanilla extract
- ½ teaspoon sea salt
- ½ cup unsalted butter cold (1 stick)
- 1 large egg
Instructions
- Lightly spray a 10” cast iron skillet and preheat oven to 375F.
- Core and slice peaches into thin wedges, and set aside in a medium bowl.
- In a small bowl, whisk together ½ cup sugar, cornstarch, cinnamon.
- Pour sugar mixture over the peaches and mix well (I like to do this in 2 steps for a more even mix).
- Meanwhile, in another medium bowl, whisk all-purpose flour, remaining ¼ cup sugar (reserving the 1-2 teaspoons for topping), and sea salt.
- Add in chunks of cold butter and work it into the flour mixture by hand (note: if you have a dough blender/cutter you can use this, or two forks).
- Add the egg into the dough and mix until well combined.
- Pour peach mixture evenly into prepared skillet.
- Sprinkle crumbles of dough on top of the peaches and cover even with remaining sugar.
- Bake for 45 minutes or until golden brown on top and allow it to cool and thicken (about 15-20 minutes).
- Enjoy warm with vanilla ice cream of on its own!
